Minestrone Soup

1. Melt butter or margarine in a heavy pot over medium heat
- Original recipe makes 6 servings

- 4 tablespoons margarine
- 3/4 cup chopped onion
- 1/4 cup chopped celery
- 1/2 cup chopped carrots
- 1 (19 ounce) can cannellini beans
- 1/2 cup shredded cabbage
- 1 (14.5 ounce) can stewed tomatoes
- 1 tablespoon tomato paste
- 1 1/2 cups cubed potatoes
- 1 quart chicken broth
- 2 cloves garlic, minced
- 2 tablespoons dried parsley
- 1 teaspoon salt
- 1/2 cup elbow macaroni
- 1/2 cup grated Parmesan cheese
Salad Classic Coleslaw

Fresh, crisp and tangy coleslaw makes an ideal side dish for fried fish
- 8 cups (2 L) shredded cabbage
- 1-1/4 tsp (6 mL) salt
- 3 cups (750 mL) grated carrots
- 1/2 red onion, thinly sliced
- 1/3 cup (75 mL) white vinegar
- 2 tbsp (30 mL) vegetable oil
- 4 tsp (18 mL) granulated sugar
- 1 tsp (5 mL) dry mustard
- 1/2 tsp (2 mL) celery seeds
- 1/4 cup (60 mL) chopped fresh parsley
Italian Marinara Sauce (authentic)

My Sicillian father used to make this sauce at least weekly
- 3 (28 ounce) cans crushed tomatoes in puree (I like San Marzano but any without citric acid are fine)
- 10 medium garlic cloves
- 1 large Spanish onion, chopped
- 1 ⁄4 cup extra virgin olive oil
- 1 ⁄2 teaspoon fresh ground black pepper
- 1 cup fresh basil, coarsely chopped (I use a large handful)
- 1 cup fresh parsley, coarsely chopped (again a large handful)
- 2 bay leaves
- 1 pinch baking soda, if needed (or if you must sugar)
Strawberry Spinach Salad with Poppy Seed Dressing Recipe

Spinach salad looks best-dressed when it wears luscious red strawberries and accents of toasted pecans
- 1/3 cup olive oil
- 1/4 cup sugar
- 3 tablespoons white or balsamic vinegar
- 2 tablespoons sesame seeds
- 1 tablespoon poppy seeds
- 1 tablespoon chopped onion
- 1/4 teaspoon paprika
- 1/4 teaspoon Worcestershire sauce
- 1 package (9 ounces) fresh spinach, trimmed
- 4 cups fresh strawberries, sliced
- 1/4 cup chopped pecans, toasted

Fettuccine Alfredo

Bring a large pot of lightly salted water to a boil
- 680 g | 24 ounces dry fettuccini pasta
- 227 g | 1 cup butter
- 232 g| 3/4 pint heavy cream
- salt and pepper to taste
- 1 dash garlic salt
- 85 g | 3/4 cup grated Romano cheese
- 50 g | 1/2 cup grated Parmesan cheese

not exactly diet food but very high in protein and fiber but a little high in sodium
- 2.5 lbs of raw kale leaves
- 2.50 tbsp Coconut Oil
- 2.50 tsp Spices - onion powder
- 5.00 tsp Spices - Garlic powder
- 3.75 tsp Spices - Chili powder
- 2.50 tsp Spices - Paprika
- 1.25 tsp Primordial Himalayan Sea Salt
- 0.62 tsp Cayenne Pepper (optional)
