- Crust:
- 2 1/2 cups all-purpose flour
- 2 tablespoons sugar
- 1 teaspoon salt
- 1 1/4 cups cold unsalted butter cubed
- 1/3 cup ice water
- Filling:
- 1/4 cup unsalted butter
- 5 pounds medium Honeycrisp apples peeled and sliced 1/4 inch thick
- 1/2 cup sugar
- 1/4 cup packed brown sugar
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground allspice
- 1/4 teaspoon grated lemon peel
- 1/2 cup apple cider
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- One large egg yolk
- 1 tablespoon of heavy whipping cream
- Coarse sugar

- 1 1/2 cups part skim mozzarella cheese, shredded
- Minced fresh chives and sour cream, to taste
