This easy meal is hearty and colorful, with a great blend of Southwest flavors and heat!
- 3 Lbs. ground beef
- 1 cup chopped onion
- 2 cans ( 10 oz. each) enchilada sauce
- 2 Tbsp. all-purpose flour
- 2 tsp. chopped chipotle peppers in adobo sauce
- 1 tsp ground cumin
- 1 tsp. dried oregano
- 2-1/2 cups water
- 2 cups milk
- 13 cup butter, cubed
- 1 tsp salt
- 4 cups mashed potato flakes
- 2 cans (4oz. each) chopped green chilies, undreained
- 2 cups (8oz.) shredded Mexican cheese blend, divided
- 2 cans (11oz. each) Mexicorn, drained
- 2/3 cup chopped green onions

Lemon Sage Chicken

The sauce is rich and tasty, and the batter makes the chicken breasts taste exquisite
- Sauce:
- 4 Boneless skinless chicken breast halves(6 oz. each)
- 3 eggs, beaten
- 1/4 cp grated parmesan and romano cheese blend
- 1 Tbsp. minced fresh parsley
- 1 tsp. dried basil
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 1/2 cup all-purpose flour
- 2 Tbsp. olive oil
- 2 Tbsp. chopped shallot
- 3 garlic cloves, minced
- 1/4 cup white wine
- 4 1/2 tsp. lemon juice
- 1 Tbsp. minced fresh parsley
- 1 tsp. dried sage leaves
- 1 tsp. grated lemon peel
- 1/2 cp. heavy whipping cream
- 3 Tbsp. cold butter, cubed

- 1 loaf (1 lb.) French bread
- 2 Tbsp. mayonnaise
- 1 Tbsp. lemon juice
- 2 garlic cloves, minced
- 1/2 lb. thinly sliced deli smoked turkey
- 1/2 lb. thinly sliced deli ham
- 6 slices hard salami
- 1 medium sweet red pepper, julienned
