Scalloped Potatoes and Ham for 50

Cut ham in bite-size cubes
- 8 pounds fully cooked ham slice, 1/2-inch thick
- 40 cups - 13 lbs thinly sliced potatoes
- 8 cans (10 1/2 ounces) cream of mushroom soup or cream of celery soup
- 2 cups milk
- 4 cups chopped onion
- 2 cups chopped green bell pepper
- 1 tsp pepper
- 2 sticks butter
- 8 cups shredded Cheddar cheese, optional
Gordon Ramsay's Beef Wellington

1. Pre-heat the oven to 400 degrees Fahrenheit
- .88 lbs Beef fillet
- .88 lbs Flat mushrooms
- 4 slices Parma ham (can substitute with Prosciutto)
- English mustard for brushing meat
- .44 lbs puff pastry
- 2 Egg yolks
- Approx 8 Charlotte/New potatoes
- 1 Clove garlic, crushed
- 1 Sprig thyme (fresh)
- 2 large baby gem lettuce
- Salt and pepper
- Olive oil
- Mustard vinaigrette, optional
Roasted Turkey and Homemade Gravy

Preheat the oven to 325 degrees F
- BRINE:
- Remove the neck, giblets, and liver from the cavity of the turkey and reserve for the gravy. Rinse the turkey inside and out under cold running water.
- 1 cup Kosher salt
- 1 cup brown sugar
- 2 oranges - quartered
- 2 lemons - quartered
- 6 sprigs of thyme
- 4 sprigs of rosemary
- TURKEY BROTH:
- 1 tablespoon vegetable oil
- Reserved turkey neck and giblets
- 1 large carrot, coarsely chopped
- 1 onion, coarsely chopped
- 1 large celery stalk, coarsely chopped
- 1 small bay leaf
- 3 cups turkey stock, chicken stock, or canned low-salt chicken broth
- 3 cups water
- ROAST TURKEY:
- soft butter
- 1/2 lb butter, melted
- injector
- 1 onion, cut into eighths
- 1 orange cut into eighths
- 1 stalk celery, chopped
- 1 carrot, chopped,
- 2 bay leaves
- 4 sprigs thyme
- celery - 1 bunch, cleaned and chopped coarsely
- 1 head of garlic, cloves peeled and left whole
- 1/2 cup turkey broth
- 1/2 cup apple cider

- 2 sticks butter, softened
- 3 cups sugar
- 5 eggs (room temperature)
- 3 cups cake flour
- 1 cup Pet Evaporated milk (or Carnation)

How to Make Slow Cooker Caramelized Onions

Peel, cut in half, and thinly slice enough onions to fill a slow cooker half to three-quarters full
- Makes about 4 cups
- 8 medium/large onions*
- 1/4 cup melted butter or olive oil (about a tablespoon for every 2 onions)
- 1 teaspoon salt (1/4 teaspoon for every 2 onions)

- 1/2 cup white sugar

- 1/2 cup thinly sliced tasso
- 1/2 cup flour
- 2 Tbsp chopped parsley
- 4 cups chicken stock
- Salt and white pepper to taste
Cajun Tomato Pie

PiePre-bake the pie crust according to the instructions
- 1 pie crust
- 1 large or two med fresh tomatoes sliced
- 1 large Vidalia or other sweet onion sliced
- 1 tsp. sugar
- A sprinkle of salt and fresh ground black pepper

- Mayonnaise
- Mozzarella Cheese
