Sauerkrautauflauf (Sauerkraut Casserole)

Butter a 2½ quart casserole dish
- 1/2 lb double-smoked bacon, cut into 1/4 inch cubes
- 1 lb sauerkraut (canned is fine)
- 1 large apple, peeled and sliced
- 1 small onion, chopped
- 1/2 cup beef broth
- 2 tsp sugar
- 1/4 tsp pepper
- 2 1/2 lb potatoes, peeled and cubed
- 1 1/4 about 1 1/4 cups milk, hot
- salt, nutmeg, pepper to taste
- 1 Tbsp butter
- 2 Tbsp grated cheese

Method: Heat the milk a bit and then dissolve the yeast in it
- 4 1/2 cups less 1-T all-purpose flour
- 1 cup plus 1 T milk
- 1-1/2 oz. yeast
- 1 t salt
- 2/3 cup butter or clarified butter
- 1 or 2 eggs
Avocado and Pineapple Salad

1. Combine olive oil, vinegar, orange juice, and sugar in a blender until smooth
- 1/3 cup olive oil
- 1/3 cup vinegar
- 1/3 cup orange juice
- 1/3 cup sugar
- salt and pepper
- 1 head iceberg lettuce, shredded
- 2 cups of fresh ripe pineapple chunks
- 1 medium red onion, sliced thin
- 1 large florida avocado, peeled and sliced

Method: In a large skillet, over medium heat, heat oil and cook onions and green onions until tender and golden
- 1 medium onion
- 2 green onions, thinly sliced
- 2 T vegetable oil
- 10 oz. frozen chopped spinach, thawed OR
- cooked mustard greens and collards (see vegetable section)
- 12 oz. cottage cheese
- 8 oz. cream cheese, softened
- 1/2 cup feta cheese
- 1/2 t dried dill
- 1/4 t black pepper
- 1 large egg
- 16 oz. frozen phyllo pastry, thawed
- 1/2 cup butter, melted
Cherry Tomato Salad

Directions In a big bowl, combine cherry tomatoes, green olives, back olives, and spring onion
- 40 cherry tomatoes, halved
- 1 cup pitted and sliced green olives
- 1 (6 ounce) can black olives, drained and sliced
- 2 green onions, minced
- 3 ounces pine nuts
- 1/2 cup olive oil
- 2 tablespoons red wine vinegar
- 1 tablespoon white sugar
- 1 teaspoon dried oregano
- salt and pepper to taste

- 1/4 cup diced water chestnuts
- 1/4 cup chopped cilantro leaves
- 1/2 cup finely sliced green onions, plus more for garnish if desired
- 3 garlic cloves, crushed
- 1 tablespoon finely grated ginger root
- 1 anchovy filet
- 1 teaspoon toasted sesame oil
- 1 teaspoon Asian fish sauce
- 1 tablespoon soy sauce, or more to taste
- 1 egg white
- 1/2 teaspoon white sugar
- 1/2 teaspoon paprika
- 1 pinch cayenne pepper
- 1 pinch salt
- 4 thick slices white bread

Tennessee Whiskey Pork Chops

Whisk whiskey, cider, sugar, 2 teaspoons vinegar, mustard, vanilla, and cayenne together in bowl
- 1/2 cup Jack Daniel’s Tennessee Whiskey or bourbon
- 1/2 cup apple cider
- 2 tablespoons packed light brown sugar
- 4 teaspoons cider vinegar
- 1 tablespoon Dijon mustard
- 1/2 teaspoon vanilla extract
- 1/8 teaspoon cayenne pepper
- 4 (8- to 10-ounce) bone-in, center-cut pork chops, about 1 inch thick, trimmed
- 2 teaspoons vegetable oil
- Salt and pepper
- 1 tablespoon unsalted butter
Classic Green Bean Casserole

Directions Preheat the oven to 350 degrees F
- 1/3 stick butter
- 1/2 cup diced onions
- 1/2 cup sliced fresh mushrooms
- 2 cups sliced green beans
- 3 cups chicken broth
- 1 (10 3/4-ounce) can cream of mushroom soup
- 1 (2.8-ounce) can French-fried onion rings
- Pinch House Seasoning, recipe follows
- 1 cup grated Cheddar
Mutti's German Stuffing

Melt butter over medium-high heat
- 1 loaf old bread cut into 1" cubes (fresh bread can also be used; spread the bread out in a single layer and leave overnight or heat in a 300 degree oven for about 15 minutes)
- 2 medium onions, finely chopped
- 4 stalks celery,finely chopped
- 1/2 lb butter
- 2 cans cream of mushroom soup
- 1/2 teaspoon dried rosemary
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried marjoram
- 1 small bunch Italian parsley, washed and coarsely chopped
- 4 teaspoons minced garlic
- French's Mustard to taste
- salt and pepper
