Green Beans and Potatoes

Prepare the green beans and potatoes
- 2 pounds green beans, cut into pieces
- 2 pounds potatoes, unpeeled, diced
- 1 large onion, diced
- 2 large pieces bacon, sliced
- 2 cans vegetable broth
- 1 can cream of mushroom soup
- Salt and pepper to taste
Jim's Jicama, Daikon, Murliton, and Mango Salad with a Citrus Dressing

Use a whisk to mix all of the dressing ingredients
- medium sized jicama, cut into small cubes
- 2 chayote squash/mirliton, cored, not peeled, cut into small cubes
- 2 cups finely cubed daikon
- 1 mango, cored, peeled, cut into medium cubes
- 1 red onion, peeled, cut into small cubes
- Dressing
- 1/2 cup orange juice
- 1 T Dijon or stone ground mustard 1T olive oil
- 2 t sugar
- 2 T white wine vinegar
- 1 t parsley, finely chopped
- 1 t basil, finely chopped (optional)
- 3 T cilantro, finely chopped
- 1 t hot sauce (e.g., Crystal Sauce)
Battered Deep Fried Corn on The Cob

In a Deep Fat Fryer or Deep Heavy Dutch Oven Preheat Peanut Oil Or Other Oil to 375 Degrees F
- Peanut Oil Or Other Oil
- Fresh or Thawed Frozen Ears Corn-on-Cob, broken or cut in halves
- 1/2 cup buttermilk
- 2 eggs, beaten
- 1/2 cup self rising flour -- enough to make a thick batter
- 1/2 teaspoon garlic powder or Garlic Magic (see note)
- 1/2 teaspoon table salt
- 1/8 teaspoon Black Pepper
- cornflake crumbs
Creole Pork Chops

Season pork chops with creole seasoning as desired
- Creole seasoning
- 2 Tbs vegetable oil
- 6 pork chops
- 2 large onions
- 1 bell pepper sliced
- 1 small can sliced mushrooms drained
- 3 medium potatoes sliced
- 3-4 carrots sliced
- 1 can tomato soup
- 2 cans Rotel tomatoes with chilies
Chicken Pot Pies

Directions 1. Preheat the oven to 350°F
- 3 tablespoons butter or vegetable oil
- 1 1/2 cups diced yellow onion
- 2 teaspoons minced garlic
- 3 tablespoons flour
- 3 cups chicken broth
- salt as needed
- freshly ground black pepper as needed
- 1 cup diced carrot
- 1 cup diced celery
- 2 cups diced red or Yukon gold potatoes
- 4 cups diced cooked chicken meat
- 1 cup green peas, thawed if frozen
- 2 tablespoons chopped flat leaf parsley
- 2 puff pastry sheets or 9-inch prepared pie crusts
Poached Pears with Pecan Sauce

To poach the pears: In a large pot, combine the water and sugar over medium-high heat
- Poaching liquid:
- 5 cups water, plus more as needed
- 1/2 cup packed light brown sugar
- 6 ripe but firm pears, such as Bosc or Anjou, peeled, halved lengthwise and cored
- 1 lemon
- Creamy Pecan Sauce:
- 3/4 cup packed light brown sugar
- 1/2 cup water
- 1/2 cup heavy cream
- 1 cup toasted pecan halves
- Pinch kosher salt

Preparation: Heat the oven to 400 degrees F
- 2 pounds baking potatoes, peeled, thinly sliced
- 1 medium onion, thinly sliced
- Salt
- 2 cups boiling water
- 1-1/2 cups peeled, diced tomatoes
- 1/2 teaspoon dried oregano
- Freshly ground pepper
- 1/3 cup olive oil
- 1/2 cup freshly grated pecorino or Parmesan cheese
- 1/4 cup dried bread crumbs
