Place 1 pastry sheet on work surface
- 1 (17 1/4 oz.) pkg. frozen puff pastry, thaw
- 1 (4.25 oz.) jar champagne mustard, divided
- 1 cup freshly grated Parmesan cheese
- 1-1/2 Tbsp. dried oregano
- 2 tsp. garlic powder
- 8 oz. thinly sliced prosciutto ham
- 1 large egg, lightly beaten
Baked Ziti Casserole

Method: Cook the ziti al dente
- 1 lb. ziti (tubular pasta)
- 16 oz. ricotta cheese
- 1 cup fresh chopped parsley
- 2 eggs lightly beaten
- salt and pepper
- 2 cups grated mozzarella cheese
- parmesan cheese
- 3 cups homemade warm marinara sauce (see Sauces section) or commercial sauce
How To Cook Wild Rice on Stove Top

Wash wild rice in 3 changes of hot tap water, drain
- 2/3 c. wild rice
- 2 1/2 c. water
- 1/2 to 1 tsp. salt
Jim's Mango Sauce

Combine all and simmer gently until heated through
- 3 cups mangos, peeled, seeded and chopped (or use frozen chunks)
- 2 tablespoons confectioners' sugar ( or to taste)
- 1 tablespoon dark rum
- 1 tablespoon butter
- 1 tablespoon brown sugar
- 1 teaspoon lemon juice
- 1 teaspoon orange juice
- 3 tablespoons water
Pineapple Foster

Method: In a large skillet, cook the butter over high heat until lightly browned, 1 to 2 minutes
- 4 T unsalted butter
- 1/2 cup light brown sugar
- pinch of cinnamon
- 1/2 ripe pineapple - peeled, cored and cut into 8 long spears*
- 1/2 cup dark rum
- vanilla ice cream, for serving

- 1 large baking apple - cored and thinly sliced
- 1/3 cup golden raisins
- 2 Tablespoons brown sugar - packed
- 1/2 teaspoon ground cinnamon

Cut two 12x22-inch pieces of cheesecloth; lay them on a clean work surface, overlapping each other perpendicularly ...
- 1 large onion, roughly chopped
- 2 carrots, roughly chopped
- 1 head of garlic, cloves separated and lightly crushed (unpeeled)
- 10 sprigs flat-leaf parsley, cut in half plus 3 T chopped for garnish
- 6 sprigs thyme
- 4 sprigs rosemary
- 2 dried bay leaves
- 1/2 t whole black peppercorns
- 2 T olive oil
- 6 oz salt pork, trimmed of rind and cut into 1/4 by 1 inch pieces
- 3 pounds beef chuck, cut into 1-1/2 to 2 inch cubes
- coarse salt and freshly ground pepper
- 3 T all-purpose flour
- 3 cups homemade or low-sodium canned beef stock
- 1 750 ml bottle red wine, preferably burgundy or pinot noir
- 1 t tomato paste
- 1 lb frozen pearl onions
- 1/2 cup water
- 1 T unsalted butter
- 1 T sugar
- 10 oz mushrooms, quartered
Halibut Tacos

Flake the cooked halibut into a skillet
- 1 lb halibut, cooked
- 2 tablespoons salsa
- 2 tablespoons taco seasoning
- 1 teaspoon cumin
- 1 lime, juice of
- tortilla, warmed (corn or flour)
- Lettuce, shredded
- 1/2 cup salsa (for topping)
- 1 cup cheese, grated (cheddar or jack)
- Tomato, diced (optional)
- onion, diced (optional)
- Avocado, diced (optional)
- black olives, sliced (optional)
- sour cream (optional)
Pressure Cooker Lettuce Soup

PREPARATION Melt butter in open pressure cooker then lightly cook onion
- 1 Tbs butter
- 1 onion chopped
- 1 large potato peeled and chopped
- 1 head lettuce chopped
- 2 cups chicken stock
- 2 cups milk
- salt and pepper to taste
- chopped fresh parsley when serving
Meat Loaf

Combine all ingredients and form into 2 or 3 small round loaves (whatever fits in your pressure cooker)
- 1 1/2 lb. ground chuck
- 1 can tomato sauce
- 2 c. cracker crumbs
- 2 eggs
- 1/2 c. chopped onion
- 1/4 c. chopped green pepper
- Salt & pepper to taste
