- 1 white cheesecake, chilled and cut into slices
- 1 pkg spring roll or lumpia wrappers
- pieces of chopped chocolate
- water for sealing wrappers
- oil for deep frying
- chocolate syrup and whipped cream
Jim's Kinda Sorta Potato Pancakes

A take-off on traditional potato pancakes
- Ingredients
- 1 pkg. Simply Potatoes - regular shredded
- 1 pkg. Simply Potatoes - Southwest style shredded
- 1 large container mashed potatoes (e.g., Country Crock)
- 1/4 cup finely chopped chives
- 1 sprig of fresh rosemary, leaves finely chopped
- 1 minced onion
- 6 eggs
- 1 cup flour
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon baking powder

Directions: 1 Place fish in a 2-qt shallow baking dish
- 6 lbs fresh cod fish fillet
- 1 (60 ounce) can condensed tomato soup
- 1 (60 ounce) can condensed chicken broth
- 2 cups salsa or 2 cups picante sauce
- 6 tablespoons lime juice
- 12 teaspoons chopped fresh cilantro
- 6 teaspoons dried oregano
- 3/4 teaspoon garlic powder
- 24 cups cooked rice
Roast Pork with Pears

Eight hours before you want to eat, place the pork, skin side up, on an oven rack in the sink and pour over freshly...
- 2 kg pork belly, bone in, skin scored by the butcher into 1cm strips (rack??)
- Cider vinegar
- 3 plump cloves of garlic
- Fine salt and freshly ground pepper
- 8 sprigs of thyme
- 2 tbsp olive oil
- 1 bay leaf
- 4 red onions, peeled and quartered through the root
- 4 pears
- 125 ml dry cider
- 200 ml chicken stock
Sweet and Sour Pork

- 1 cup water
- 3/4 cup brown sugar
- 1/2 cup cider vinegar
- 3 T cornstarch
- 2 T soy sauce
- 5 lbs. pork tenderloin, cut into small slivers
- 10 T cornstarch
- 5 beaten eggs
- 15 T flour
- 2-1/2 t -each baking powder and salt
- 1-1/4 cups vegetable oil
- 4 baby bok choy, cut cross-wise into strips
Bacon Brussels Sprouts Gratin

Preheat oven to 400º F. Toss brussel sprouts in olive oil and season generously with salt and pepper
- 1 1/2 pounds brussels sprouts, halved
- 8 oz. bacon, cooked and crumbled
- 1 cup sharp cheddar cheese, grated
- 1/2 cup fontina cheese, grated, optional
- 3/4 cup heavy cream
- 2 tablespoons extra-virgin olive oil
- 1 egg
- 1 sprig rosemary, minced
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon red pepper flakes, optional
- kosher salt and freshly ground pepper, to taste
Warsaw Pierogi Soup

Heat the oil in a large, heavy-bottomed saucepan at medium to high heat, add and brown the meat until cooked –app
- 1 6-8 oz. boneless, skinless chicken breast cut into 1 1/2 x 1/2 inch strips (optional)
- 18 - 24 Bite-Sized pierogies
- 1 tbsp canola oil
- 1 medium to large onion, sliced thin
- 2 stalk celery, cut at a 45 degree angle
- 1 medium to large carrot, cut at a 45 degree angle
- 2 cups of lightly packed spinach –stems removed and cut into 3/4 inch strips
- 4-6 medium mushrooms
- 1 900 ml chicken broth
Pressure Cooker Citrus Scallops

Preparation Grease cooking rack, then place it and the wine in 4 quart or larger pressure cooker
- 1/2 cup dry white wine
- 8 oz sea scallops
- 1 Tbs grated lemon rind
- 1 Tbs grated orange rind
- 2 tsp orange-flavored liqueur
- 1 tsp corn starch
- 1 tsp margarine
- 1/4 tsp sugar

DIRECTIONS Mix all cream cheese ingredients together until smooth, set aside
- 2 1/4 cups all-purpose flour
- 3/4 cups sugar
- 3/4 cups butter or margarine;softened
- 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 3/4 cup fat-free sour cream
- 1 tsp. almond extract
- 1 egg
- 1 small jar strawberry preserves
- 1/2 cup sliced almonds
- Cream cheese filling ingredients
- 1 8oz. pkg. (1/3 less fat) cream cheese
- 1/4 cup sugar
- 2 tablespoons all-purpose flour
- 1 egg.
