Ingredients
- 1 cup water
- 3/4 cup brown sugar
- 1/2 cup cider vinegar
- 3 T cornstarch
- 2 T soy sauce
- 5 lbs. pork tenderloin, cut into small slivers
- 10 T cornstarch
- 5 beaten eggs
- 15 T flour
- 2-1/2 t -each baking powder and salt
- 1-1/4 cups vegetable oil
- 4 baby bok choy, cut cross-wise into strips

Method:
Combine sauce ingredients in a saucepan. Bring to a gentle boil. Simmer until sugar is dissolved. Rub cornstarch into pork pieces. Combine eggs, flour, baking powder and salt in a bowl. Add pork and stir to coat well.
Heat oil over high heat in a large, non-stick skillet. Add pork, in batches, and cook until golden and no longer pink inside. Transfer pork to a serving plate. Continue until all pork is cooked. Pour oil from pan, leaving 2 T in the pan. Stir-fry the bok choy until wilted; add pork and sweet and sour sauce. Stir and heat through. Serve hot with plain white rice.
