Chinese Cucumber Salad

Method: In a medium bowl, mix together the soy sauce, vinegar, sugar, oils and pepper flakes
- 1 tablespoon soy sauce
- 1/4 cup rice wine vinegar
- 1 tablespoon sugar
- 1 tablespoon vegetable oil
- dash of sesame oil
- 1 teaspoon red pepper flakes
- 2 cucumbers, peeled, seeded and thinly sliced
- 1 small red bell pepper, seeded and thinly sliced into strips
Italian Sausage Soup With Tortellini

Directions In a 5 quart Dutch oven, brown sausage
- 1 pound sweet Italian sausage, casings removed
- 1 cup chopped onion
- 2 cloves garlic, minced
- 5 cups beef broth
- 1/2 cup water
- 1/2 cup red wine
- 4 large tomatoes - peeled, seeded and chopped
- 1 cup thinly sliced carrots
- 1/2 tablespoon packed fresh basil leaves
- 1/2 teaspoon dried oregano
- 1 (8 ounce) can tomato sauce
- 1 1/2 cups sliced zucchini
- 8 ounces fresh tortellini pasta
- 3 tablespoons chopped fresh parsley
Spinach Noodle Pudding - Kugel

Preheat oven to 350 degrees F
- 1 large onion, chopped
- 1 stick (1/2 cup) butter, divided use
- 3 garlic cloves, pressed
- 1 (16 oz.) pkg. egg noodles (fine or medium)
- 2 pkg Birds Eye Frozen Creamed Spinach
- 2 containers (8 oz. each) sour cream
- 2 eggs, beaten
- 1 tsp. grated nutmeg
- salt and pepper, to taste
- bread crumbs to sprinkle on top
- 1/2 cup parmesan cheese, grated

Combine flour and seasonings in bowl
- SEASONED FLOUR:
- 2 1/2 to 3 lbs. cut up frying chicken
- 1 1/2 c. flour
- 1 tbsp. garlic salt
- 1/4 tsp. poultry seasoning
- 1 1/2 tsp. black pepper
- 1 1/2 tsp. paprika
- Combine all ingredients; set aside.
- CRISPY BATTER:
- 2/3 c. flour
- 1/2 tsp. salt
- 3/4 c. flat beer or water
- 1/8 tsp. pepper
- 1 egg yolk, beaten
Pressure Cooker Scandinavian Shrimp and Potato Salad
