Pineapple Cream Cheese Cobbler

Preheat oven 350 degrees. melt butter and pour into 9 x 13 inch glass baking dish
- 1 stick (1/2 cup) butter
- 1 egg, lightly beaten
- 1 cup milk
- 1 cup of all Purpose flour
- 1 cup sugar
- 2 Teaspoons baking powder
- 1/2 teaspoon salt
- 2 cans (20 oz cans) Pineapple chunks (drained)
- 8 oz cream cheese, cut into small pieces.

Rissoto With Peas

In cooker, heat 2 tablespoons of butter over medium heat

- 1 cup arborio or other short-grain rice

- 1 cup sugar
- 1 (16-oz.) can crushed pineapple with juice
- 1 yellow cake mix (Duncan Hines)
- 2 cups milk
- 8 oz. cream cheese
- 1 small box vanilla instant pudding or prepared regular pudding or,
- prepared Bird’s Custard
- 1 large container of Cool Whip
- 1 cup chopped pecans
- 1 cup diced maraschino cherries
Jim's Cold Tuna Macaroni Salad

Directions: 1 Cook macaroni according to package directions, drain in colander and rinse with cold water
- 3 hard-boiled eggs, diced
- 3 cups macaroni, uncooked
- 1 (10 ounce) package frozen green peas, thawed and drained
- 1/2 cup finely chopped celery
- 1/4 cup finely chopped onion
- 1/4 cup finely chopped bell pepper
- 2 tablespoons chopped pimentos
- 2 cloves garlic, mashed
- 3 tablespoons chopped dill
- 1 tablespoon honey
- 1 tablespoon Dijon mustard
- 2 (6 ounce) cans tuna, drained and flaked
- 1/2-1 cup mayonnaise (the amount depends on how moist or dry you like your salad)
- 3 tablespoons sour cream
- 1/4 cup sweet pickle
- 1/4 teaspoon salt ("or" to taste)
- 1/8 teaspoon pepper ("or" to taste)
- 1 teaspoon lemon pepper
- 2 teaspoons onion powder
- 3 teaspoons celery seeds
- 1 teaspoon garlic powder
- 2 teaspoons lemon juice
- 1 teaspoon dried thyme
- 1 tablespoon capers, rinsed
Slow Cooker Hatch Green Chile Verde

- 2 pounds tomatillos, husked and rinsed
- 1 medium yellow onion, peeled and quartered
- 4 cloves garlic, peeled and smashed
- 1 16oz Jar of 505 Southwestern Roasted Green Chiles
- 1/3 cup loosely packed cilantro leaves
- 1 teaspoon kosher salt
- 2 pounds pork sirloin roast
- 2 tablespoons olive oil
- 1 tablespoon butter
- kosher salt and freshly ground black pepper
Green Salad with Mustard Vinaigrette

- 1 tablespoon (15 ml) balsamic vinegar
- 1 teaspoon (5 ml) Dijon mustard
