Spring Onion and Herb Rice Pilaf

Heat butter and oil in a heavy-based saucepan
- 1 Tbsp Olive oil
- 25 g Butter
- 1 bunch Spring onion, trimmed and finely chopped
- 1 cup Long grain rice, rinsed
- 1 1/2 cups Chicken stock
- 1/4 cup Parsley, finely chopped
- 2 handfuls Baby spinach, roughly torn if large, optional
Chicken Fried Rice for 100

Heat oil in roasting pan. Add garlic and ginger - stir fry until fragrant
- 20 lb shredded chicken
- 4 insert pans of cooked and cooled long grain rice
- 1 cup oil
- 1 cup chopped garlic
- 1 cup chopped ginger
- 8 cups each sliced vegetables (carrot, cabbage, fresh green peas, green onion, yellow onion, celery cut on the dias, julienned carrots)
- 2 bags frozen green peas
- 1 cup + soya sauce
- 4 pkgs fried rice seasoning
- 4 tsp fresh pepper powder
- 12 eggs + 1 teaspoon salt

Fried Rice - Basic Recipe

INSTRUCTIONS Heat oil in wok, med heat; add onions, bell peppers, and carrots
- 1 T peanut oil
- 2 cup chopped onion, green pepper, and carrots
- 3 t ground ginger
- 3 cup oyster mushrooms
- 1 Beaten egg
- 2 cups cooked rice - cold - can be instant rice
- 1 T each butter, water, oyster flavored sauce, soy sauce.
- 1 cup cut up cooked ham or chicken or pork or beef or shrimp.
- 1-cup snow peas

Lemon Cream Sauce

In a small saucepan, melt the butter over medium-high heat
- 1 tablespoon butter
- 1 tablespoon all-purpose flour
- 1/2 cup chicken broth
- 1/4 cup heavy whipping cream
- 2 teaspoons lemon zest
- 1/8 teaspoon fresh lemon juice
- 1/2 teaspoon salt
- 1/8 teaspoon ground white pepper
Jamaican Jerk Pork

1. Pour the beer, rum, molasses, soy sauce, and lime juice into a bowl
- 1/2 (12 ounce) bottle lager style beer
- 3 fluid ounces dark rum
- 1/4 cup molasses
- 1/4 cup soy sauce
- 1/4 cup lime juice
- 2 tablespoons minced garlic
- 2 tablespoons minced ginger
- 1 scotch bonnet chile pepper, minced
- 2 teaspoons chopped fresh thyme
- 2 teaspoons chopped fresh marjoram
- 1 1/2 teaspoons ground allspice
- 2 teaspoons ground cinnamon
- 1 teaspoon ground nutmeg
- 2 bay leaves
- 8 (6 ounce) pork loin chops
- kosher salt and cracked black pepper to taste
Pressure Cooker Saffron Fish Stew

Cut fish into 8 chunks. Place wine, onion, garlic, parsley, and bay leaf in a 4 or 6 quart pressure cooker
- 1 pound firm fish (halibut, haddock, cod, pollack, etc.) fresh or thawed
- 1/4 cup dry white wine
- 1 medium onion, finely chopped (about 1 cup)
- 2 cloves garlic, minced
- 1/4 cup chopped parsley
- 1 bay leaf
- 8 small new red potatoes
- 3 carrots, cut into 1/2 inch chunks
- 1 (14 1/2 ounce) can chicken broth
- Pinch of saffron threads OR 1/4 teaspoon turmeric
- 1 small red pepper, cut into chunks
- 1 cup frozen peas
