Vanilla Crepes

Directions In a large bowl, mix together the milk, egg yolks and vanilla
- 1 1/2 cups milk
- 3 egg yolks
- 2 tablespoons vanilla extract
- 1 1/2 cups all-purpose flour
- 2 tablespoons sugar
- 1/2 teaspoon salt
- 5 tablespoons melted butter
Creamy Squash Pudding

Preheat oven to 350°. Lightly grease a 3-quart baking dish
- 10 cups thinly sliced yellow squash (about 8 large)
- l/2 cup plus 2 tablespoons butter, divided
- 1 large onion, chopped
- 1 (8-ounce) package sliced baby portabella mushrooms
- 2 cloves garlic, minced
- 1/3 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1 (8-ounce) package cream cheese, softened
- 2-1/2 cups whole milk or 1/2 and 1/2
- 6 large eggs
- 1 (5-ounce) package shredded Swiss cheese
- 1 cup grated Parmesan cheese
- l-1/2 cups crushed round buttery crackers
Fish Cakes with Anchovy Sauce

1. Add the thyme, lemon slices and salmon to a wide pan of simmering salted water and poach for a minute
- For the anchovy dressing:
- 1 thyme sprig
- 1/2 lemon, sliced
- 300 g salmon fillet
- 300 g smoked haddock fillet
- 400 g La Ratte, Charlotte or other waxy potatoes
- 2 tbsp olive oil
- Finely grated zest of 1 large lemon
- 2-3 tbsp lemon juice
- Sea salt and freshly ground black pepper
- Handful of flat leaf parsley, chopped
- Handful of chervil, chopped
- 3 tbsp plain flour
- 2 medium eggs, lightly beaten
- 50 g Japanese panko breadcrumbs
- 2 tbsp olive oil
- 2 tbsp capers
- 2 shallots, peeled and finely chopped
- Bunch of flat leaf parsley, leaves chopped
- 4 marinated anchovies, chopped
- 4 tbsp extra virgin olive oil
Quebec Wild Rice Salad

Directions Place cooked rice in large bowl
- Marinade:
- 3 cups cooked wild rice
- 1 cup diced carrots
- 1 cup peas
- 1 cup diced green or red bell pepper
- 1 cup sliced mushrooms, fresh
- 1 large celery stalk, finely chopped
- 2 tablespoons fresh minced parsley
- 1/2 cup Olive Oil
- 1/3 cup fresh lemon juice
- 1 garlic clove, pressed
- 1 Tbsp fresh minced tarragon
- 1 Tbsp fresh minced basil

Pizza Casserole

Directions Brown ground chuck
- 1 lb. ground chuck
- 1 pkg. sliced pepperoni
- 1 jar Ragu pizza quick sauce
- 2 C. cheddar cheese
- 1 16 oz. bag egg noodles
- 1 can mushrooms, drained
- 2 cans Chef Boyardee pizza sauce

Cherry Tomato Salsa

Method of Preparation 1
- 5 about 5 cups of whole cherry tomatoes
- 1 small to medium onion (or half of a large onion) (red onions are fantastic in this)
- 3-5 jalapenos, no seeds (depending on how spicy you like it)
- 1 clove minced garlic
- 1/2 tsp sea salt
- 1/4 tsp pepper
- 1/4 -1/2 tsp red pepper flakes (again, depending on spice)
Wild Rice Congee

- 1 cup wild rice
- 1/2 cup brown rice (short or long grain)
- 1/2 cup white rice (short or long grain)
- 1/4 cup white or yellow miso OR 6 cups low sodium chicken or vegetable stock
