Pizza Within A Pizza

Preparation: Preheat oven to 475 degrees F
- 2 cans refrigerated pizza dough
- 2-3/4 cups shredded mozzarella (divided use)
- 3/4 cup shredded Monterey Jack cheese
- 3/4 cup shredded Cheddar
- 3/4 cup shredded provolone
- 2 Tablespoons grated Parmesan
- 2 Tablespoons grated Romano
- Toppings of your choice (pepperoni, bell peppers, olives, etc.)
- 1 jar pizza sauce
Pressure Cooker Classic French Broccoli

PREPARATION Wash and drain broccoli
- 1 Lb fresh broccoli
- 1 cup water
- 2 bay leaves
- 3 tsp grated lemon rind
- 4 slices of lemon
- 2 cloves garlic minced
- salt and pepper to taste
Creamy Chocolate Pie

Mix sugar, cocoa and flour in 2 cups milk in 2 quart saucepan
- MERINGUE:
- 1 1/4 c. sugar
- 5 tbsp. flour
- 3 tbsp. cocoa
- 2 c. milk
- 4 eggs, separated (save whites for meringue)
- 4 oz. cream cheese
- 2 tbsp. butter
- 1 tsp. vanilla
- 1 (9 inch) deep dish pie crust, baked
- 4 egg whites
- 1/2 c. sugar
- 3 tsp. cornstarch
- 1/2 tsp. vanilla
- 1 1/2 tbsp. marshmallow creme
- Beat egg whites until stiff. Add sugar, cornstarch, vanilla and marshmallow creme. Spread on top of pie filling and lightly brown in 400 degree oven.
Fruity Gazpacho

Mix all the ingredients in a food processor until smooth
- 1/2 a honeydew melon
- 2 cups green grapes
- 1/2 a cucumber, preferably English, peeled if not
- 1/2 a green pepper
- 1/2 an avocado
- 1 jalapeno, seeds & membrane removed
- Zest & juice of a lime
- 2 tablespoons Italian parsley
- Optional, quartered grapes and diced cucumber, pepper and avocado for garnish

- 41/2 cups
- 1 (8 oz) package cream cheese, softened
- 1 (7 oz) container (2 cups) Solo Marshmallow Crème
- 11/2 cups caramel ice cream topping
- 1/8 teaspoon salt
Louisiana Maque Choux

1.Melt butter over medium heat
- 1/2 cup unsalted butter or 4 tablespoons olive oil
- 1 medium onion, finely chopped
- 1 bell pepper, finely chopped
- 1 small hot pepper, finely chopped (optional)
- 1 large clove garlic, finely chopped
- 4 cups corn kernels (preferably fresh corn, cut from the cob -- about 4 ears or 1 1/2 pounds)
- 2 pinches red pepper flakes
- 2 medium tomatoes, peeled, seeded, chopped
- 1 cup chicken stock (low sodium, if you use canned - we use homemade)
