Cinnabon Cinnamon Rolls

Directions Rolls: Place ingredients in machine following manufacturer's instructions
- Rolls:
- 1/4 C. butter, melted
- 1/4 C. water
- 1/2 package instant vanilla pudding (1/2 of a 3.4 oz. box)
- 1 C. milk
- 1 egg, beaten
- 1 Tbs. granulated sugar
- 1/2 tsp. salt
- 4 C. bread flour
- 2 1/2 tsp. yeast
- Filling:
- 1/2 C. butter, softened
- 1 C. brown sugar
- 2 tsp. cinnamon
- 1/4 C. chopped walnuts (optional)
- 1/4 C. raisins (optional)
- Frosting:
- 4 oz. cream cheese, softened
- 1/4 C. butter, softened
- 1 1/2 C. confectioners sugar
- 1/2 tsp. vanilla extract
- 1 1/2 tsp. milk
Bread Machine Doughnuts

Add first 8 ingredients to a 1-1/2- to 2-pound bread machine according to the manufacturer's dirctions
- 3/4 cup milk
- 2 tablespoons water
- 1 egg
- 3 tablespoons margarine or butter, cut up
- 3 cups bread flour
- 1/4 cup sugar
- 1/2 teaspoon salt
- 1-1/2 teaspoons active dry yeast or bread machine yeast
- Cooking oil or shortening for deep-fat frying
- 1-1/2 cups sifted powdered sugar
- 1/2 teaspoon vanilla
- Milk
Spicy Guacamole

Using a fork, mash the avocado with the lime juice in a small bowl
- 2 large ripe avocados, peeled and pitted
- 4 t freshly squeezed lime juice
- 1/2 cup chopped fresh cilantro
- 1/2 cup chopped white onion
- 1 large tomato, cut into 1/4-inch dice
- 4 large cloves of garlic, finely chopped
- 4 large fresh serrano chiles, seeded and chopped fine
- 1/2 t salt
- 1/2 t freshly ground black pepper
- 1 to 2 drops hot sauce (optional)
- 1 to 2 T mayonnaise (optional)
Blender Crepes

Blenderize well (may need to be done in two batches (or mix thoroughly)
- 3 cups all-purpose flour
- 3 cups milk
- 6 large eggs
- 1/2 teaspoon salt
- 1 teaspoon vanilla
- 2 Tablespoons vegetable or canola oil
Mexican Corn

Preparation: 1. Heat the olive oil in a medium skillet over medium heat
- 1/2 cup corn (fresh or frozen)
- 1 Tbsp. olive oil
- 2 Tbsp. chopped onion
- 2 Tbsp. chopped bell pepper
- 1/2 sm. summer squash; cut into 1/2" rounds and quartered
- 1/2 cup chopped tomato
- 1 sm. jalopeno; finely chopped
- 1 - 2 tsp. chile powder
- 1 - 2 tsp. ground cumin
- Salt and pepper
KFC Coleslaw

Directions Mix together the dressing and pour over cabbage mix
- Dressing:
- 1 head of cabbage, shredded
- 1 or 2 carrots, grated
- 1/4 onion, grated
- 1 C. Miracle Whip Salad Dressing
- 1 C. sugar
- 1/4 C. oil
- 1/4 C. vinegar
Fajitas

Directions: 1 Mix all marinade ingredients and pour over the meat (you can put it all in a large zip-lock)

- 5 5 5 teaspoons mccormicks fajita seasoning mix (in the packet)
- 1/2 1/2 1/2 teaspoon oregano
- 1/4 1/4 1/4 cup olive oil
- 1/4 1/4 1/4 cup vinegar (red wine vinegar for beef fajitas or white wine vinegar for chicken fajitas)
- 1 1 1 seeded chopped habanero pepper
- 1 1 1 tablespoon lime juice
- The Peppers and Onions
- 1 1 1 red bell pepper
- 1 1 1 green bell pepper
- 1 1 1 large yellow sweet onion
- 1/4 1/4 1/4 cup olive oil
- Toppings
- cheese (optional) sour cream (optional) guacamole (optional) salsa (optional) tomato (optional)
Honey Mustard Bread

Add ingredients according to manufacturer's directions
- 1/2 cup Water
- 1 1/2 cups White bread flour
- 1/2 cup Wheat flour
- 2 teaspoons Dry milk
- 2 1/2 tablespoons Honey
- 1/2 teaspoon Salt
- 1/4 cup Chicken broth (low salt)
- 1 2/3 tablespoons Gourmet mustard
- 1 teaspoon Chives (dried)
- 2 teaspoons Yeast (active dry)
Filipino Chicken Adobo

Remember to wash your chicken very well
- 1 whole chicken (cut into eighths)
- 1 whole garlic (chopped)
- olive oil or vegetable/corn oil
- 1 tsp ground black pepper
- 4 whole black pepper cloves
- 3 dried bay leaves
- 1 cup soy sauce
- 1 cup vinegar
- 7 up/sprite
- 1 whole lemon (cut into 4)
Posole

Cover pork, rinds, salt, pig feet with the chicken broth
- 2 to 3 lbs. pork shoulder, trimmed and cut into chunks
- 1/2 lb pork rinds
- 1 or 2 pigs feet or smoked hocks
- 1 T salt
- 12 cups chicken broth (homemade is the best)
- 3 to 4 lbs. hominy (frozen)
- juice of 1 lime
- 4 T ground chile (mild, medium, or hot)
- 8 cloves garlic
- 2 cups chopped onions
- 1 cup each, chopped carrots, celery, and green chiles
- 4 or 5 dried chipotle pods or 4 canned
- 3 T oregano, rubbed between fingers
- lime wedges, chopped cilantro, and chopped onion, for garnish
