Prepare a glass baking dish (at least 8x10) by spreading butter along the bottom and sides

- 2 tablespoons butter
- 2 lbs frozen tater tots
- 4 eggs
- 1 cup milk
- 3 cups shredded cheddar cheese
- 2 cups shredded mozzarella cheese
- 1 cup sour cream
- 5 chives, chopped
- 1 ⁄2 lb spicy breakfast sausage
- 2 teaspoons seasoning salt
- 1 tablespoon hot sauce
- 1 ⁄4 cup breadcrumbs or 1⁄4 cup seasoned stuffing mix

Pressure Cooker Orange Beets

PREPARATION Scrub beets well to remove all dirt and other junk

- 1 cup water
- 1 tsp salt
- 1/2 tsp pepper
- 1 Tbs cornstarch

Green Rice Pilaf

1. Preheat oven to 375°F
- 2 tablespoons vegetable oil
- 1 cup uncooked long-grain white rice (not converted)
- 1/4 cup finely chopped white onion
- 2 fresh poblano or Anaheim chilies,* roasted, peeled, seeded, deveined and chopped
- 6 thin green onions, thinly sliced
- 1 clove garlic, minced
- 1/4 teaspoon salt
- 1/4 teaspoon ground cumin
- 1-3/4 cups chicken broth
- 1-1/2 cups shredded queso Chihuahua or Monterey Jack cheese, divided
- 1/3 cup coarsely chopped fresh cilantro Cilantro & a sprig for garnish (optional)
- Chilies can sting and irritate the skin; wear rubber gloves when handling peppers and do not touch eyes. Wash hands after handling.

Method: Place all ingredients, except the tortilla chips, green onion and cheese, in a heavy pot
- 2 quarts Imperial Broth or turkey stock
- 1 large onion, chopped
- 2 garlic cloves, minced
- 4 ribs celery, sliced
- 2 carrots, sliced
- 1 cup frozen peas
- 4 peeled, seeded green chiles, chopped
- 1 pkg. sliced mushrooms, washed
- 2 cups cooked arborio rice
- 4 boneless, skinless chicken breasts, cut into cubes/strips
- 1 large can chopped tomatoes
- 2-3 T hot salsa
- fresh cilantro, chopped
- 2 firm avocados
- tortilla chips
- shredded TexMex cheese
- green onions, thinly sliced
- salt, pepper, cumin

- 2 flat-leaf parsley sprigs
- 4 black peppercorns5
- 1 pound large shrimp6, peeled and deveined
- 3 plum tomatoes7, seeded and cut into 1/4-inch dice
- Juice of 1 lime8
- 3 ripe avocados9, preferably Hass, halved and pitted
- 1 cup small ripe cantaloupe balls
- 1 cup small ripe honeydew balls
- 1 cup Cilantro Mayonnaise
- 6 small fresh cilantro11 leaves, for garnish
- Cilantro Mayonnaise
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- Finely grated zest of 1 orange
- 2 Tablespoons chopped fresh cilantro leaves
- 2 Tablespoons chopped flat-leaf parsley
- Salt and coarsely ground black pepper, to taste
- Whisk together the mayonnaise, sour cream, orange zest, cilantro, parsley, salt, and black pepper. Refrigerate. Use within 24 hours.
