Ed's Bruschetta

Method: Put chopped tomatoes with juices in a bowl
- 3 - 4 chopped ripe tomatoes
- salt and freshly ground pepper
- a few pieces of fresh, torn basil
- 8 slices good Italian or French bread
- 2 - 3 cloves of garlic, cut in half
- 6 T extra-virgin olive oil
Shrimp Quesadillas

Directions Heat 2 tablespoons vegetable oil in a large skillet over medium-high heat
- 2 tablespoons vegetable oil
- 1 onion, sliced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 teaspoon salt
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1 pound uncooked medium shrimp, peeled and deveined
- 1 jalapeno pepper, seeded and minced
- 1 lime, juiced
- 1 teaspoon vegetable oil, or as needed
- 6 large flour tortillas
- 3 cups shredded Mexican cheese blend, divided

"A delicious traditional English breakfast dish using smoked white fish, rice and eggs
- 2 cups uncooked basmati rice
- 2 eggs
- 4 ounces smoked haddock, or other white fish
- 1 bay leaf
- 1 cup milk, or as needed
- 1 tablespoon butter
- 1 teaspoon curry powder
- 4 green onions, chopped
- 1/4 cup frozen green peas
- salt and pepper to taste
- 1/2 cup low-fat plain yogurt
Yogurt Bread

Follow bread machine sequence
- 2 1/4 cups Bread flour
- 1 tablespoon Sugar
- 1 tablespoon Dry milk
- 1 teaspoon Salt
- 1 tablespoon Butter
- 2 tablespoons Sesame seeds
- 1/2 cup Yogurt (4 1/2 oz)
- 1/2 cup Water
- 1 teaspoon Dry yeast
Pesto Herb Bread

Follow manufacturer's instructions for placing flour and remaining ingredients into the bread pan
- 3 1/4 c Bread flour
- 3 tb Sugar
- 1 tb Dried parsley
- 1 1/2 ts Garlic powder
- 1 1/2 ts Bread machine yeast
- 1 t Dried oregano
- 1 t Dried basil
- 3/4 ts Salt
- 1 c Water
- 2 tb Water
- 2 tb Skim milk
- 2 tb Pesto sauce
- 2 ts Olive oil
Chocolate Pudding 2

In a medium saucepan, combine sugar, cornstarch, cocoa and salt
- 3/4 cup sugar
- 1/4 cup cornstarch
- 1 tbsp. unsweetened cocoa powder
- 1/8 tsp. salt
- 1 1/2 cups whole milk
- 1 cup heavy whipping cream
- 4 egg yolks
- 8 1-oz. squares semisweet chocolate, chopped (I substituted 8oz. Ghirardelli milk chocolate chips)
- 1 tbsp. butter
- 1 tsp. vanilla extract
Beet and Cabbage Sauerkraut

Finely slice and grate cabbage and beets
- Other optional ingredients:
- 3 Cups cabbage- finely sliced
- 1 Cup grated beet- (or leave it out and add an extra cup of cabbage, or grated carrot)
- 1/8-1/4 C up sliced onion - optional
- 1 teaspoon caraway seeds
- 1 garlic clove grated
- 1-2 teaspoon grated ginger
Almond Bark

Directions Melt white chocolate and butter together over hot water in a double boiler
- 1 lb. white chocolate
- 1 Tbs. butter
- 1 tsp. almond extract
- 1 C. whole, unblanched almonds, toasted
