Peanut Butter Pretzel Tart with Caramel drizzle

1. Preheat oven to 350. using a food processor, finely grinbd the pretzels, 1/4 cup brown sugar and 1/8 tsp salt
- 2 cups broken salted pretzels sticks
- 1/2 cup brown sugar
- 3/8 tsp salt
- 1 stick plus 3 tbs unsalted butter-(6 tbsp butter melted and cooled, 3 tbsp butter softened and 2 tbsp butter chilled)
- 4 ounces cream cheese, softened
- 1/2 cup peanut butter
- 1 1/4 cup heavy cream chilled
- 1 tsp pure vanilla extract
- 1/2 cup granulated sugar

1.Make the cakes- Preheat oven to 350 and line 2 large baking sheets with parchment paper
- 1 1/4 cups all purpose flour
- 1/4 cup plus 2 tbsp unsweetened cocoa powder
- 1 1/2 tsp baking soda
- 1/2 tsp kosher salt
- 1/4 tsp cream of tartar
- 1 1/2 sticks unsalted butter, softened
- 1 1/4 cups granulated sugar
- 2 large eggs, room temperature

Christmas Pea Soup

1.In a Dutch oven or large soup pot with lid, heat oil over medium
- 1 tbsp extra virgin olive oil
- 1 medium onion, chopped
- 6 carrots, sliced medium
- 1 tbsp dried thyme
- 1 tsp kosher salt
- Table grind Black pepper to taste
- 32 oz Chicken Stock or Broth
- 1 16oz split green peas, picked over and rinsed
- 1 ham bone plus two cups of ham, cut in 1/2 inch cubes

- 1/4 tsp black pepper, freshly ground, divided
- 1 tsp canola oil
- 1/2 cup(s) fat-free reduced sodium chicken broth
- 1/2 cup(s) uncooked shallot(s), chopped
- 2 Tbsp water
- 1 Tbsp mustard, coarse grain-variety
- 1/4 cup(s) reduced-fat sour cream

Maple Pumpkin Pie

1. Set oven rack in lowest position and heat oven to 350
- 1 piecrust, store brought or homemade, fitted into a 9"pie plate
- 2 large eggs
- 1 15oz can pure pumpkin puree
- 1 cup heavy cream
- 1/2 cup pure maple syrup
- 3/4 tsp cinnamon
- 1/2 tsp ground ginger
- 1/2 tsp kosher salt

Sicilian Caponata

1. Peel eggplantlenghtwise, leaving 1 inch wide strips of skin between each peeled section
- 1 large eggplant
- 1/2 cup Extra Virgin olive oil plus more for drizzling
- 1/2 cup marinara sauce
- 1 medium white onion, diced
- 2 cups celery, sliced 1/2" thick pieces or sliced smaller if you prefer
- 1/2 cup large green olives, pitted and cut into quarters

- 1/2 cup plus i tbsp heavy cream
- 1/4 cup ( 1/2 stick) unsalted butter, cut into pieces
- 12 ounces semi-sweet chocolate, chopped
- 1 tsp pure vanilla extract

- 1 1/4 cup flour
- 1/2 tsp salt
- 1 tbsp baking powder
- 1 1/4 tsp sugar

- 1 14.5 ounce can low sodium chicken broth, drained and rinsed
- 2 cans (15 ounces) small white beans
- 1 8 ounce can niblet corn
