Roast Salmon with whole grain mustard crust

- 1/4 cup whole grain mustard (I use Maille)
- 1 tbsp. extra virgin olive oil
- 1 1/2 tbsp. minced chives
- 4 8oz skin-on wild salmon fillets
- Kosher salt and freshly ground pepper to taste

1. Heat oven to 350. Spray 9 inch pie pan with Pam
- Crust
- 2 tbsp. unsalted butter
- 2 tbsp. orange marmalade
- 1 1/4 cups graham cracker crumbs

- 3 cups orange sherbet, softened
