String Beans with Shallot Butter

Ingredients

  • 2 pounds fresh string beans, rinsed and trimmed
  • 1/3 cup butter
  • 1 tbsp extra virgin olive oil
  • 1/2 cup thinly sliced shallots
  • 1 tsp kosher salt
  • Black Pepper to taste

Preparation

Step 1

1.In a medium saucepan,melt 1/4 cup of butter with olive oil over medium heat. Add shallots and cook for 7-10 minutes over low heat, stirring occasionally until tender.
2.Stir in remaining butter, salt and black pepper to taste, remove from heat
3.Cook string beans uncovered in a large pot of salted boiling water for 5-7 minutes until crisp tender or steam string beans until crisp tender. Drain well and toss with butter mixture
4. transfer to serving bowl
