Combine dry ingredients in bowl; whisk in buttermilk
- 1-1/4 cups yellow cornmeal
- 2 T. scallions, chopped
- 2 tsp. sugar
- 1/2 tsp. baking soda

- cayenne to taste
- 1/2 cup buttermilk
- 1/2 cup regular milk
- 2 T. butter

Buttermilk Cornbread

Heat oil in an 8-inch cast-iron skillet or muffin pans in a 450° oven 5 minutes
- 2 tablespoons vegetable oil
- 1 cup yellow cornmeal
- 1 tablespoon all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup buttermilk
- 1 large egg
- 1 T. sugar
Barbecue Chicken Legs w/Whiskey Dipping Sauce

Preheat grill to medium-high
- FOR THE RUB AND CHICKEN, COMBINE:
- If you’re not a fan of dark meat, you can always use chicken breast. But make sure to watch closely during grilling because lean meats can dry out.
- Makes: 4 servings
- Total time: 35 minutes
- 2 tsp. paprika
- 2 tsp. garlic powder
- 1 tsp. dried thyme
- 1 tsp. cayenne pepper
- 1 ⁄2 tsp. kosher salt
- 8 chicken legs (drumsticks)
- FOR THE SAUCE, WHISK:
- 1 cup ketchup
- 1 ⁄3 cup brown sugar
- 1 ⁄4 cup whiskey (optional)
- 1 ⁄4 cup cider vinegar
- 2 Tbsp. prepared yellow mustard
- 2 Tbsp. Worcestershire sauce
- 1 tsp. red pepper flakes
- Juice of 1 lime
- Salt to taste
K's Crabmeat/Shrimp Cakes

Mix mayo, mustard, lemon juice & lime juice together in small bowl; stir well
- 1 lb. lump crabmeat
- 1/2 red bell pepper, chopped finely
- 1 cup light mayonnaise
- 1/8 cup Dijon mustard
- 1 T. lemon juice
- 1/2 pkg Old Bay Classic Crab Cake Seasoning
- 1/4 cup minced shallot
- 1/3 lb. peeled shrimp, chopped finely
