K's Crabmeat/Shrimp Cakes

Ingredients
- 1 lb. lump crabmeat
- 1/2 red bell pepper, chopped finely
- 1 cup light mayonnaise
- 1/8 cup Dijon mustard
- 1 T. lemon juice
- 1/2 pkg Old Bay Classic Crab Cake Seasoning
- 1/4 cup minced shallot
- 1/3 lb. peeled shrimp, chopped finely
- 1/2 cup cracker meal
- 1/4 lime, juiced
- 2 T. olive oil, 1 T. butter (for 6 cakes)

Preparation
Step 1
Mix mayo, mustard, lemon juice & lime juice together in small bowl; stir well.
Mix crabmeat, red pepper, crab cake seasoning, shallot, shrimp and cracker meal together in another bowl; stir well.
Add mayo mixture to crabmeat, folding in lightly. Shape into 12 cakes.
Heat 2 T. olive oil and 1 T. butter in skillet on med-high heat (4-5 on electric stovetop). Fry crab cakes until brown on both sides.
(Repeat with extra oil & butter for other 6 cakes)
