Ingredients

  • 1-1/4

    cups yellow cornmeal

  • 2

    T. scallions, chopped

  • 2

    tsp. sugar

  • 1/2

    tsp. baking soda

  • 1/2

    tsp. kosher salt

  • cayenne to taste

  • 1/2

    cup buttermilk

  • 1/2

    cup regular milk

  • 2

    T. butter

  • 1/2

    cup cheddar cheese, shredded

  • 1/4

    cup veg. oil, divided

Directions

Combine dry ingredients in bowl; whisk in buttermilk. Warm regular milk & butter in small saucepan until butter melts, then stir into cornmeal mixture. Let stand 5 min. Stir in cheese. Heat 1 T. oil in skillet over med-high. Drop batter to make 2" cakes. Fry about 1 min. per side. Repeat.
