Kentucky Apple Cake

1. Follow the above steps to make the cake batter
- CREAM IN A LARGE BOWL OR STAND MIXER:
- 2 stick margarine
- 2 c sugar
- ADD:
- 2 large eggs
- IN A SEPARATE BOWL, COMBINE:
- 2 1/2 c all purpose flour
- 2 tsp baking powder
- 1 tsp baking soda
- 1/8 tsp salt
- 2 tsp cinnamon
- ADD DRY INGREDIENTS TO THE MARGARINE MIXTURE. MIX IN:
- 3 c finely chopped apples
- 1 c chopped walnuts
- 2-3 Tbsp milk
- GLAZE
- 3/4 c sugar
- 1/2 c margarine
- 1/4 c buttermilk
- 1 Tbsp light corn syrup
- 1/4 tsp baking soda
- 1 tsp real vanilla extract
Crab and Artichoke Gratin

reheat oven to 400°. Coat a 1-qt
- FOR THE TOPPING, COMBINE:
- 1 ⁄2 cup panko bread crumbs
- 1 ⁄4 cup shredded Parmesan
- 2 Tbsp. chopped fresh parsley
- 1 Tbsp. olive oil
- FOR THE GRATIN, SAUTÉ:
- 1 ⁄2 cup chopped scallions
- 1 ⁄4 cup diced red bell pepper
- 1 Tbsp. olive oil
- 1 tsp. minced fresh garlic
- 1 ⁄4 cup dry sherry
- STIR IN:
- 1 can artichoke hearts, drained, chopped (14 oz.)
- 1 ⁄2 cup heavy cream or half-and-half
- 8 oz. reduced fat cream cheese, cubed
- 1 ⁄2 cup shredded Parmesan
- 1 Tbsp. minced lemon zest
- 1 Tbsp. fresh lemon juice
- 2 tsp. Dijon mustard
- 2 tsp. minced fresh tarragon
- 1 tsp. Tabasco sauce, or to taste
- 1 ⁄2 tsp. Worcestershire sauce
- 2 cans pasteurized crabmeat, drained (6.5 oz. each)

K's Slow Cooker Pepper Steak

1.Sprinkle strips of sirloin with garlic powder to taste
- 2 pounds top round steak, cut into 2 inch strips
- garlic powder to taste
- 3 tablespoons vegetable oil
- 1/4 cup Beef Broth, warmed
- 1 tablespoon cornstarch
- 1 chopped onion
- 2 large green bell peppers, roughly chopped (or mixture of red, green, yellow and orange)
- 1/2 lb asparagus, cut into thirds
- 1 (14.5 ounce) can stewed tomatoes, with liquid
- 1 large can mushrooms, drained
- 3 T. low-sodium soy sauce
- 4 T. spicy Szechuan sauce
- Several shakes Worcestershire Sauce
- Several shakes A-1 Sauce
Light Blue Cheese Dressing

Whisk all ingredients in bowl, gently stirring in blue cheese
- 1/2 cup low-fat plain yogurt
- 1 T. 2% milk
- 1/4 cup mayonaise
- 1 T. fresh lemon juice
- 1/4 tsp. Worcestershire
- Pinch of cayenne pepper
- 1/2 cup crumbled blue cheese
- 1/2 tsp. salt
- Pepper to taste
Favorite Chicken Enchiladas

1. Preheat oven to 350°
- 5 tablespoons butter, divided
- 1 medium onion, chopped
- 1 medium-size red bell pepper, chopped
- 3 cups chopped cooked chicken
- 3 (4-oz.) cans diced green chiles, divided
- 3 cups (12 oz.) shredded colby-Jack cheese blend, divided
- 8 (8-inch) soft taco-size flour tortillas
- 2 tablespoons all-purpose flour
- 3/4 cup chicken broth
- 1/2 cup milk
- Toppings: fresh cilantro leaves, chopped tomato, shredded lettuce
Candy's Chicken Jerusalem

Cook another 10 minutes or so after following above steps
- Add:
- 6 chicken breasts, boneless or 12 thighs
- 1/2 cup flour
- Brown floured chicken in 2 to 3 Tbsp. butter.
- 2 chopped green onions
- 1/2 c. white wine
- 1/2 c. water
- Simmer for 45 minutes. Then add:
- 2 tsp. salt
- 1 c. thinly sliced mushrooms
- 2 – 14 oz. cans of artichokes
- Parmesan cheese
Easy Peach Cobbler

Melt butter in a 13- x 9-inch baking dish
- 1/2 cup unsalted butter
- 1 cup all-purpose flour
- 2 cups sugar, divided
- 1 tablespoon baking powder
- Pinch of salt
- 1 cup milk
- 4 cups fresh peach slices
- 1 tablespoon lemon juice
- Ground cinnamon or nutmeg (optional)
Barbecued Shrimp

Place shrimp in 13 x 9 pan; top with lemon wedges and bay leaves
- 4 lbs. unpeeled, large shrimp
- 2 lemons, cut in wedges
- 2 bay leaves
- 1 cup butter, melted
- 1 cup ketchup
- 1/2 cup Worcestershire sauce
- 4 garlic cloves, chopped
- 2 T. Old Bay seasoning (or 1 T.Old Bay, 1 T. Emerill's Essence)
- 1 tsp. dried rosemary
- 1 tsp. dried thyme
- Hot sauce to taste
- French bread
7-Up Biscuits

Mix Bisquick, sour cream and 7 up
- 4 cups Bisquick
- 1 cup sour cream
- 1 cup 7-up
- 1/2 cup melted butter
Crab Cakes
