Pasta e Fagioli

Cook pasta. Drain, reserving 1-1/2 cups of cooking water; set pasta and water aside
- 1 cup dry small pasta shells
- 1/2 lb. ground beef
- 2 oz. prosciutto, diced
- 2 cups onion, diced
- 1 T. garlic, minced
- 1 T. chopped fresh rosemary
- 1 tsp. anchovy paste
- 1/2 tsp. red pepper flakes
- 1/4 cup dry white wine
- 2-1/2 cups chicken broth
- 1 (28 oz) can diced tomatoes
- 2 (15 oz) cans canellini or northern beans, drained & rinsed
- 1 cup fresh bread crumbs
- 1/4 cup Parmesan, shredded
- 1/4 cup minced fresh parsley
- 1 tsp. lemon zest, minced
Roasted Rosemary Potato Salad

1. Preheat oven to 450 degree F oven
- 2 1/2 pounds tiny new red potatoes, halved or quartered
- 1 medium red onion, cut in wedges
- 1/4 cup olive oil, divided
- 2 tablespoons snipped fresh rosemary
- 2 cloves garlic, minced
- 1/2 teaspoon kosher salt
- 1/2 teaspoon coarsely ground black pepper
- 2 tablespoons balsamic vinegar
- 1 medium red sweet pepper, cut into bite-sized strips
- 3 tablespoons pine nuts, toasted
Jerk Turkey Burgers with Mango Slaw

Preheat a grill or grill pan to medium high
- 1 pound ground turkey
- 1 tablespoon jerk seasoning, plus more for sprinkling
- 1 small green apple, peeled and grated
- 1/2 cup finely chopped scallions
- 1/4 cup panko (Japanese breadcrumbs)
- Kosher salt and freshly ground pepper
- 1/4 cup mayonnaise, plus more for brushing
- 1/4 cup mango chutney, roughly chopped
- 3 cups shredded green cabbage
