Bread Pudding with Maple Banana Sauce

For bread cubes: Cut or tear the bread into 1/2-inch pieces or cubes (should have 12 cups)
- Maple Banana Sauce:
- 1 pound French bread, unfrosted cinnamon rolls, cinnamon swirl bread, or brioche
- 6 eggs
- 4 cups half-and-half or light cream
- 1 cup packed brown sugar
- 1 tablespoon brandy, optional
- 2 teaspoons vanilla
- 1 cup whipping cream
- 1/4 cup packed brown sugar
- 2 tablespoons pure maple syrup or maple-flavored syrup
- 2 sliced firm bananas
Seafood Imperial

Preheat oven to 400 degrees F (200 degrees C)
- 1/2 pound lump crabmeat
- 1/2 lb. shrimp, peeled and cut into thirds
- 4 oz. bay scallops
- 1/2 cup mayonnaise
- 1 tablespoon fresh lemon juice
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon Cajun or seafood seasoning
- 1/2 teaspoon salt
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon dry mustard
- 1 egg, beaten
- 1/4 cup fresh bread crumbs (or Ritz crackers)
- 1 teaspoon paprika
- 3 tablespoons butter

- 1 cup butter or margarine, divided
- 3 cups white cornmeal
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 2 teaspoons baking powder
- 1 1/2 teaspoons salt
- 1 teaspoon baking soda
- 7 large eggs, divided
- 3 cups buttermilk
- 3 cups soft breadcrumbs
- 2 medium onions, diced, about 2 cups
- 1 large bunch celery, diced, about 3 cups
- 1/2 cup finely chopped fresh sage or 1 tablespoon dried rubbed sage
- 6 (10 1/2-ounce) cans condensed chicken broth, undiluted
- 1 tablespoon pepper
Blue Cheese Dressing

Combine all ingredients and refrigerate
- 1/2 cup fat-free mayonnaise
- 1/4 cup (1 ounce) crumbled blue cheese
- 1 tablespoon red wine vinegar
- 1 teaspoon bottled minced garlic
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
K's Slow Cooker Chicken & Spinach Lasagna

In large bowl stir together spinach, chicken, mushrooms and Italian cheese; mix well
- 5-6 oz. bag fresh Spinach, chopped
- 3-4 cups cooked chicken (I use rotisserie chicken, deboned & chopped)
- 8 oz. mushrooms, sliced
- 2 (10 oz) pkgs refrigerated reduced-fat Alfredo sauce
- 1 (10 oz) can reduced-fat cream of mushroom soup
- 1-1/4 cups chicken broth
- 1/2 tsp. black pepper
- 1 T. Better Than Bouillon Chicken Base
- 3 cups shredded Italian Blend Cheese
- 1 cup shredded Cheddar Cheese
- 9 uncooked Lasagna noodles
Chicken & Wild Rice Soup

•In a large saucepan, combine the first nine ingredients
- 2 quarts chicken broth
- 1/2 pound fresh mushrooms, chopped
- 1 cup finely chopped celery
- 1 cup shredded carrots
- 1/2 cup finely chopped onion
- 2 teaspoon chicken bouillon granules
- 2 teaspoon dried parsley flakes
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried thyme
- 1/4-1/2 teaspoon poultry seasoning
- 1/2 cup butter, cubed
- 1/4 cup all-purpose flour
- 1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
- 1/2 cup dry white wine or additional chicken broth
- 3 cups cooked wild rice
- 2 cups cubed cooked chicken (or use a rotisserie chicken, chopped)
Italian Sausage Kale Soup

•Crumble sausage into a Dutch oven; add onion
- 1-1/2 pounds Italian turkey sausage links, casings removed
- 1 medium onion, chopped
- 8 cups chopped fresh kale
- 2 garlic cloves, minced
- 1/4 teaspoon crushed red pepper flakes, optional
- 1/2 cup white wine or chicken stock
- 1 carton (26 ounces) chicken stock
- 1 can (15 ounces) white kidney or cannellini beans, rinsed and drained
- 1 can (14-1/2 ounces) no-salt-added diced tomatoes
- 1/2 cup sun-dried tomatoes (not packed in oil), chopped
- 1/4 teaspoon pepper
Stuffed Cabbage Casserole

Preheat oven to 350°F. Spray a large glass casserole dish with non-stick spray
- 2 tsp olive oil, divided
- 1 lb. 95% lean ground beef
- 1 large onion, chopped fine
- 1 tbsp finely minced garlic
- 1/2 tsp. dried thyme
- 1 tsp sweet Hungarian Paprika
- salt and fresh ground black pepper to taste
- 1 1/2 heads green cabbage, coarsely chopped
- 1 can (14.5 oz.) petite dice tomatoes with juice
- 1 can (15 oz.) tomato sauce
- 1/4 cup water
- 2 cups cooked brown rice
- 2 cups low-fat mozzarella cheese (Sargento)
Smoky Baked Beans

•In a Dutch oven, cook bacon over medium heat until crisp
- 1/2 pound sliced bacon, diced
- 1/2 medium sweet onions, chopped
- 1 can (28 ounces each) baked beans, undrained
- 1 can (16 ounces each) kidney beans, rinsed and drained
- 1 can (16 ounces each) butter beans, rinsed and drained
- 1/2 lb. miniature smoked sausages, cut in thirds
- 1/2 cup packed brown sugar
- 1/4 cup ketchup
- 1/4 cup cider vinegar
- 1/2 tsp garlic powder
- 1/2 tsp ground mustard
