Asiago Cheese Grits

1. Stir together grits and 3 cups water in a 3-qt
- 1 cup uncooked stone-ground grits
- 1/2 cup (2-oz.)shredded Asiago cheese
- 1 Tbsp. butter
- 1/2 tsp. salt
- 1/2 tsp. freshly ground pepper
Butternut Squash Bisque with Seared Scallops

Cook pancetta in a Dutch oven or large pot over medium high heat until crisp, about 8 minutes
- serves 8
- 3 ounces pancetta, diced
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 1/2 teaspoons Baker’s Sprinkles (or 1 teaspoon cinnamon, 1 teaspoon ground nutmeg, 1/2 teaspoon ground allspice)
- 8 large sea scallops, washed and dried thoroughly
- 1 cup yellow onion, diced
- 2-3 garlic cloves, minced
- 1 handful fresh sage, minced
- large pinch of red pepper flakes
- 1 cup dry white wine or champagne
- 16 ounces clam juice
- 2 cups chicken or vegetable stock
- 8 cups butternut squash, cut into 1″ cubes
- 1/4 cup heavy cream, warmed

Garlic Mushroom Thigns

Heat 2 tablespoons butter and 2 tablespoons of oil in a large skillet over medium high heat

- 1 1/2 pounds (700g) boneless skinless chicken thighs (around 6-8 fillets)
- 1 teaspoon each onion powder and garlic powder
- 1/2 teaspoon each of dried thyme and rosemary
- 1/2 teaspoon salt
- 1/4 teaspoon cracked black pepper
- 2 tablespoons olive oil
- For The Sauce:
- 1 tablespoon butter
- 8 ounces (250 g) sliced brown mushrooms
- 4 cloves garlic, minced (or 1 tablespoon minced garlic)
- 1 tablespoon fresh chopped parsley
- 1/2 - 1 teaspoon each of dried thyme and dried rosemary (adjust to your taste)
