Super Easy Garlic Chicken

Put olive oil and garlic in one bowl (garlic to taste)
- 4 boneless skinless Chicken breasts
- Minced garlic
- Olive oil
- Italian seasoned bread crumbs

Coconut-Lime Rice

Bring coconut milk, salt, and 2 cups water to a boil in a saucepan over medium heat
- 1 cup light coconut milk
- 1/2 tsp. salt
- 1 1/2 cups uncooked jasmine rice
- 1 tsp. lime zest
- 1 1/2 Tbsp. fresh lime juice
Focaccia Pizza Bianca

Preheat oven to 425. In bowl, stir together potatoes and 1-2 Tbs
- 3 small Yukon Gold potatoes, about 3/4 lb. total, cut into 3/16"-thick rounds
- 1/4 cup plus 1-2 Tbs. olive oil, plus more for drizzling (optional)
- Salt and freshly ground pepper, to taste
- 1 garlic head, roasted
- 1/2 batch Sicilian-style pizza dough
- Cornmeal for dusting
- 2 cups grated fontina cheese

Caramel Corn

- 1 box light brown sugar
- 2 sticks oleo
- 1/2 cup white Karo
- 1 tsp. salt
- 1 tsp. butter flavoring
- 2 tsp. soda
- 6 quarts cooked popcorn
Chicken and Wild Rice Casserole

Boil chicken in dutch oven until done and then cut into cubes
- 6-8 6-8 6-8 chicken breasts, cooked and cubed
- chicken stock
- butter
- 3-4 3-4 3-4 stalks celery, chopped
- 1 1 1 onion, chopped
- 2 2 2 boxes wild rice
- 2 2 2 cans cream of chicken soup
- 8 8 8 oz. sour cream
- crushed potato chips, optional
- 350°F 30 350°F for 30 minutes.
- 15 casserole can also be assembled the night before and then baked the next day, but bake an additional 15 minutes or until casserole is hot throughout.
- 12-15. 12-15.
- 9X9" can easily be cut in half and baked in a 9X9" dish for fewer servings. This is by far the best chicken and rice casserole you will ever eat.
Chicken Cordon Bleu Soup

INSTRUCTIONS In a large sauce pan melt butter and then add the flour to make a roux
- 1/4 cup butter
- 1/4 cup flour
- 2 1/2 cups half and half (half and half is a half cream, half milk mixture found next to the heavy cream)
- 2 1/2 cups milk
- 1 Tablespoon chicken base, or two chicken bullion cubes crushed
- 8 oz. cream cheese, softened
- 2 1/2 cups chopped rotisserie chicken (cooked chicken breast will work)
- 1/2 cup cooked and chopped bacon
- 1 cup cubed ham
- 2 cups grated Swiss cheese

- Oatmeal Cake with Coconut Pecan Frosting
- 1/2 C quick cooking oatmeal
- 3/4 C boiling water
- 1/2 C sugar
- 1/2 C brown sugar
- 2/3 C flour
- 1/2 tsp salt
- 1/2 tsp baking soda
- 1 egg
- 1/4 C of shortening
- Mix the oatmeal with the boiling water, stir and cover. Mix the remaining ingredients then stir in the oatmeal mixture. Grease and flour a 9×9 pan. Pour batter into pan and bake at 350 for 23-25 minutes.
Green Bean Stir Fry

Add olive oil in a large saute pan over medium high heat
- 1 1/2 lb.. green beans (ends removed)
- 1 red bell pepper (julienned)
- 1/2 lb. yellow squash (seeded and sliced)
- 1/2 red onion (julienned)
- 1 tsp. salt
- 1/2 tsp. pepper
- 1 tbsp. olive oil
- 2 cloves fresh garlic (minced)
- 1/4 cup white wine
- 1/4 cup fresh dill (chopped)
- 2 tbsp. fresh lemon juice
- 2 cup cooked brown rice
- 1 cup diced chicken, beef or pork (optional)
Crab Rangoon

Combine crabmeat, cream cheese, steak sauce, and garlic powder

- 1/2 lb. crabmeat, drained and chopped
- 1/2 lb. cream cheese, room temperature
- 1/2 tsp. steak sauce
- 1/4 tsp. garlic powder
- 1 egg yolk, well beaten
