Quick and Spicy Mole Chicken

Generously season chicken thighs with salt and pepper
- 8 boneless, skinless chicken thighs (about 2 1/2 pounds)
- salt and pepper
- 1/4 cup flour
- 3 tablespoons olive oil
- 1 medium onion, chopped
- 1 sweet potato, cut into 1″ cubes
- 1 1/2 cups chicken broth
- 1 tablespoon unsweetened cocoa powder
- 1/4 cup creamy peanut butter
- 1 tablespoon Chimayo Spice Mix (or your favorite Southwestern blend of spices-think cumin, oregano, chili powder)
- 1 teaspoon good quality cinnamon
- 1/2 teaspoon salt
- 1/2 cup sour cream
Sauted Carrots

Peel the carrots and cut them diagonally in 1/4-inch slices
- 2 pounds carrots
- 1 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 2 tablespoons unsalted butter
- 1 1/2 tablespoons chopped fresh dill or flat-leaf parsley
Indian-Style Grilled Chicken

1. Combine all ingredients (except cooking spray and chicken) in a large bowl; stir until well blended
- 1/2 tsp. black pepper
- 1 tsp. ground cumin
- 1/2 tsp. coriander
- 1 tsp. chili powder
- 2 tsp. garam masala
- 1/4 cup chopped fresh cilantro
- 1/2 tsp. salt
- 1/2 cup hot sauce, such as Frank's Original Hot Sauce
- 3/4 cup plain yogurt
- 1/4 cup heavy cream
- 4 garlic cloves, minced
- 3 tablespoons soy sauce
- Cooking spray
- 8 chicken bone-in thighs
Hoisin-Glazed Roast Chicken

1. Whisk the soy sauce, rice wine, hoisin sauce and honey in a bowl; set aside
- 1/4 cup low-sodium soy sauce
- 2 tablespoons Chinese rice wine
- 2 tablespoons hoisin sauce
- 2 tablespoons honey
- 2 tablespoons peanut oil
- 1 star anise pod, broken into points
- 1/2 teaspoon Szechuan peppercorns, crushed with a knife
- 2 tablespoons chopped fresh cilantro (stems and leaves)
- 3 scallions, finely chopped
- 3 cloves garlic, coarsely chopped
- 2 quartered chickens (3 to 3 1/2 pounds each)
Pasta Pizza

Cook pasta and drain. While still warm combine ricotta, 2 Tbsp
- 12 " pizza crust
- 4 oz. angel hair pasta
- 1 cup ricotta
- 4 Tbsp. fresh parmesan
- 2 cloves garlic, minced
- 3/4-1 cup Ragu sauce
- 1 4 oz. can drained sliced mushrooms
- 1 cup shredded mozzarella
- 1/2 tsp. red pepper flakes
- 3/4 lb. sausage
- 1 cup onion, chopped
- 1/2 cup green peppers, chopped
Jalapeno Bacon Deviled Eggs

Combine all but bacon and crumble it on top
- 2 large eggs, hard boiled and peeled
- 1 cup mayonnaise
- 1 1/2 tsp rice vinegar
- 3/4 tsp ground mustard
- 1/2 tsp sugar
- 3 jalapeños, seeded and chopped
- 7 pieces bacon, cooked, crisp, and crumbled
- paprika
- Salt and pepper optional
No Bread Egg Bake

Combine slightly beaten eggs, cheese and ham
- 1 dozen eggs, slightly beaten
- 1 lb. Monterey Jack cheese, shredded
- 2 c. diced ham
- 1/2 c. flour
- 1 tsp. baking powder
- 1/4 c. melted butter
- 1 pt. sm. curd cottage cheese
- 1/4 c. butter
Carrot-Ginger Sauce

Heat the oil in a 4-quart sauce pan over low heat
- 1 Tbs. canola oil
- 2 Tbs. chopped shallot
- 1 3/4 cups lower-salt chicken broth; more as needed
- 6 medium carrots, peeled and cut into large dice (about 2 cups)
- 2 Tbs. reduced-sodium soy sauce
- 1 Tbs. finely grated fresh ginger
- 1 Tbs. unseasoned rice vinegar
- 2 tsp. honey
- 1 tsp. Asian sesame oil
S'more Pie

- 1/2 Cups butter (1 Stick), melted
- 2 Teaspoons sugar
- 3/4 Cups heavy cream

- 10 Ounces semisweet chocolate chips
- 1/2 Teaspoons vanilla extract
- 1 Pinch salt
- 2 eggs, whisked
