Chicken Cutlets with Pecan Sauce

1. Heat pecans and 2 Tbsp
- 1/2 cup pecans
- 1/4 cup butter, divided
- 4 chicken cutlets (about 1 1/4 lb.)
- 1 tsp. salt
- 1/2 tsp. pepper
- 3 Tbsp. all-purpose flour
- 3 Tbsp. olive oil
- 1/2 cup chicken broth
- 1 Tbsp. brown sugar
- 2 Tbsp. cider vinegar
- 1/2 tsp. dried thyme
Plum Rice Salad

Combine rice, plums, chives, and raisins in large bowl
- 3 cups cooked brown rice
- 4 fresh California plums, cut into bit-sized pieces
- 1/3 cup fresh chives, finely chopped
- 1/3 cup golden raisins
- 3 Tbsp. white grape juice
- 2 Tbsp. vegetable oil
- 1 Tbsp. cider vinegar
- 2 Tbsp. honey
- 1 tsp. fresh ginger, minced
- 1/2 tsp. ground coriander

1. Melt butter in a Dutch oven or large saucepan over medium heat
- 6 tablespoons butter
- 1 carrot, grated
- 1 large onion, minced
- 1 garlic clove, minced
- 1/2 teaspoon red pepper flakes
- 4 medium yellow or pattypan squash, grated (about 7 cups)
- 4 cups reduced-sodium chicken broth
- 1 pound crab meat, shell pieces removed
- 1/2 cup all-purpose flour
- 2 cups whole milk
- 2 tablespoons snipped chives, optional

- 1 stick margarine
- 1 large can pet milk
- 1 large jar Jif peanut butter

- 12 medium tomatoes, cored and cut into quarters
- 1/2 cup water
- 1/3 cup coarsely chopped onions
- 2 stalks celery, coarsely chopped
- 1 teaspoon minced fresh parsley
- 1 bay leaf
- 1 teaspoon salt
- 1/4 teaspoon paprika
- 1/4 teaspoon salt
- 1/4 teaspoon sugar
