Preheat oven to 375F. Coat 12 muffin cups with cooking spray
- 1 cup all purpose flour
- 1/2 cup old fashioned oats
- 1/2 cup flaxseed meal
- 1/4 cup sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup honey
- 2 eggs, lightly beaten
- 1 cup plain yogurt
- 1/2 cup orange juice
- 1 tsp vanilla extract
- 2 tsp finely grated orange rind
- 1 cup chopped dried apricots (about 5 oz)

Process sweet potato and egg substitute in food processor until smooth
- 1 1/4 cups cooked, mashed sweet potato
- 1/2 cup frozen egg substitute, thawed
- 1 (12 oz) can evaporated skimmed milk
- 1/4 cup firmly packed brown sugar
- 1/2 tsp ground cinnamon
- 1/2 tsp vanilla extract
- 2 egg whites
- 1/4 tsp cream of tartar
- 2 tsp powdered sugar

- 2 TB brown sugar
DREAM PUDDING CAKE

- 1 envelope dream whip
- 1 pkg cake mix
- 3 eggs
- ¼ cup oil

- 1 (20 oz) can crushed pineapple
- 1 large can mandarin oranges, drained
- 12 oz cool whip
- ½ cup chopped walnuts

Beef & Potato Soup

In a crockpot stir all ingredients until well mixed
- 4 cups water
- 1 - 16 oz bag frozen hash browns, southern style
- 1 cup chopped onion
- 1 pound ground beef eye of round
- 2 - 4 oz cans of mushrooms stems and pieces, do not drain
- 1 - 2.5 oz pkg dry onion soup mix (2 pkg. per box)
- 1 - 16 oz jar of your favorite chunky salsa

- 1/3 cup sour cream
