Beef Stew

Place flour, ½ tsp salt and ¼ tsp pepper into zippered bag
- ¾ tsp coarse salt, divided
- ½ tsp fresh ground pepper, divided
- 1 lb boneless flank steak cut into small chunks
- ¼ c all-purpose flour
- 3 tsp olive oil, divided
- 1 ½ cups coarsely chopped red onion
- 8 oz sliced white mushrooms
- 3 cups beef broth
- 4 tsp tomato paste
- 3 – 4 large thyme sprigs
- 1 large bay leaf
- 1 lb baby white potatoes, unpeeled, cut in quarters
- 8 oz baby carrots
- 4 tsp finely chopped flat leaf parsley
KEY LIME PIE

In large heat resistant bowl, dissolve gelatin in boiling water
- One 0.3 oz box sugar free lime flavor jello
- ¼ c boiling water
- 2 containers 8 oz each, key lime pie flavor fat free yogurt
- 1 8 oz container fat free whipped topping, thawed
- 1 prepared 9 inch reduced fat graham cracker pie crust
Meatloaf

Preheat oven to 375. In a small bowl, beat eggs lightly with a fork
- 2 eggs, beaten
- 2 lb lean ground beef
- 1 pks (6 oz) stove top stuffing mix for chicken
- 1 cup water
- ½ cup Kraft original barbecue sauce, divided
Muffins-Oat Bran

Preheat oven to 425. Mix first four ingredients
- 2 ¼ c oat bran
- ¼ c brown sugar
- 1 ½ tsp cinnamon
- 1 TB baking powder
- 1 mashed banana
- 1 small apple – grated
- 2 TB dried raisins
- ¼ c egg substitute
- ½ c orange juice
- ¾ c skim milk
- 2 TB apricot juice
TWINKIE CAKE

Line pan with Twinkies. Mix Jello according to package
- 1 box lowfat Twinkies cut in two lengthwise and then in thirds
- 1 large box sugar free strawberry Jello or 1 large box sugar free vanilla instant pudding
- 1 large carton fat free frozen topping
- 1 ½ c milk if using vanilla pudding
Chili-Red Bean

Heat oil in nonstick dutch oven over medium high heat
- 2 tsp olive oil
- 1 large onion, chopped
- 3 garlic cloves, minced
- 1 28 oz can diced tomatoes
- 2 - 15 1/2 oz cans red kidney beans, rinsed and drained
- 1/2 (1 pound) bag frozen mixed bell pepper strips
- 2 TB canned chopped green chilies
- 2 TB taco or chili seasoning mix
- 1/2 tsp ground allspice
Cake-Lemon Poppy Seed Pound Cake

Combine the margarine or butter and the sugar in the bowl of an electric mixer, and beat until smooth
- GLAZE:
- 1/2 cup reduced fat margarine or light butter
- 1 1/2 cups sugar
- 3 egg whites
- 2 1/3 cups unbleached flour
- 2/3 cup oat bran
- 1 1/2 tablespoons poppy seeds
- 1/2 teaspoon baking soda
- 1 cup nonfat lemon yogurt
- 3 tablespoons lemon juice
- 1 tablespoon freshly grated lemon rind, or 1 teaspoon dried
- 1/3 cup confectioners sugar
- 2 teaspoons lemon juice
Chicken Skillet and Noodles

Spray large skillet with nonstick cooking spray
- 1 lb boneless skinless chicken breast halves, cubed
- ¼ cup chopped onion
- 1 lb pkg Green Giant American Mixtures frozen broccoli, carrots, and cauliflower
- 1 10 ¾ oz can condensed cream of chicken soup
- 2 TB water
- ½ cup sour cream
- 2 – 3 cups hot cooked noodles
Breakfast Vegetable Frittata

Press artichoke hearts between layers of paper towels to remove excess moisture
- 1 – 14 oz can quartered artichoke hearts, drained
- 2 plum tomatoes, seeded and finely chopped
- 2 TB sliced green onions
- 1 garlic clove, minced
- 1 TB light stick butter, melted
- 2 – 8 oz cartons fat free egg substitute
- ¼ tsp pepper
- 1/8 tsp hot sauce
- Cooking spray
- ½ c (2 oz) freshly grated Parmesan cheese
- ½ (8 oz) pkg 1/3 less fat cream cheese (Neufchatel) quartered
Blueberry Cobbler

Preheat oven to 400 F. Spray 2 six ounce custard cups with nonstick spray
- 1 1/2 cups fresh blueberries
- 2 TB + 1/2 tsp sugar
- 1 tsp minced peeled fresh ginger
- 1 tsp grated lemon zest
- 1 tsp fresh lemon juice
- 1/4 tsp cinnamon
- 1/2 cup reduced fat baking mix
- 3 TB fat free milk
