Polynesian Pork With Pineapple Rice

Preheat oven to 375 degrees
- 1 1 / 2 pounds thick-cut boneless pork chops, trimmed
- 4 teaspoons teriyaki marinade mix
- 2 tablespoons canola oil
- 1 (14- to 16-ounce) bag frozen stir-fry vegetables
- 2 cups instant rice
- 1 (8-ounce) can crushed pineapple
- 1 1 / 4 cups reduced-sodium chicken broth
- 3 / 4 cup pineapple juice
- 2 tablespoons coarse-chopped cashews, optional
Mexicorn Dip

Combine all ingredients. Chill before serving with Fritos!
- 2 cans (11 Oz. Can) Mexicorn, Drained
- 1 can (4 Oz. Can) Chopped Green Chiles
- 1 whole Bell Pepper, Chopped
- 3 whole Green Onions, Chopped
- 2 whole Jalapenos, Chopped (without Seeds)
- 8 ounces, weight Shredded Cheddar Cheese
- 1 cup Sour Cream
- 1 cup Mayonnaise
Michael Symon's BBQ Brisket

Preheat oven to 350F. Season the brisket on all sides with salt and pepper
- For the Slaw:
- 4 Lb Brisket
- 2 Cups Chicken Stock
- 2 Bottle IPA or Wheat Craft Beer
- 2 Tablespoon Cumin Seeds (toasted and crushed)
- 1 Tablespoon Coriander Seeds (toasted and crushed)
- 2 Chipotle Peppers in Adobo
- 2 Tablespoons Adobo Sauce
- Salt and Pepper
- 2 garlic cloves (sliced)
- 1 onion (sliced)
- 2 tablespoons olive oil
- 1/2 head Red Cabbage
- 1/2 clove Garlic
- 1/2 small Red Onion
- 1/2 Jalapeno (minced)
- 3 Tablespoon Champagne Vinegar
- 1 Tablespoon Dijon Mustard
- 2 Tablespoon Yellow Mustard
- 1 1/2 Teaspoon Salt
- 1 Tablespoon Worcestershire Sauce
- 1 Tablespoon ShaSha Sauce
- 1 Tablespoon Sugar
- 1 package Soft Buns
- Toppings:
- Slaw
- Ball park mustard
- Pickles
- Fresh cilantro
Cheesy Cauliflower Pancakes

Cut cauliflower into florets & cook in boiling water until tender about 10 minutes
- 1 head cauliflower
- 2 large eggs
- 1/2 c cheddar cheese, grated
- 1/2 c panko
- 1/2 t cayenne pepper (more of less to taste)

Mango Cake

- 2 1/2 cups peeled and mashed ripe mangoes
- 2 cups sugar
- 2 eggs
- 2 cups all-purpose flour
- 2 teaspoons baking soda
- 1 cup chopped pecans or 1 cup walnuts
- 1 teaspoon vanilla extract
- 4 ounces cream cheese, softened
- 1/4 cup butter or 1/4 cup margarine, softened
- 2 1/4 cups sifted powdered sugar
- 1 teaspoon vanilla extract
Autumn Apple, Pear, and Cheddar Salad with Pecans

- 1 cup apple juice
- 2 tablespoons cider vinegar
- 1 teaspoon extravirgin olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 10 cup gourmet salad greens (about 10 ounces)
- 1 cup seedless red grapes, halved
- 1 medium McIntosh apple, cored and cut into 18 wedges
- 1 medium Bartlett pear, cored and cut into 18 wedges
- 1/4 cup (1 ounce) finely shredded sharp cheddar cheese
- 3 tablespoons chopped pecans, toasted
Crockpot Thai Pork With Peanut Sauce

- Optional garnishes:
- 2 pounds boneless pork loin, fat trimmed and cut into 4 pieces
- 2 red bell peppers, cut into strips
- 1/2 cup prepared Teriyaki sauce
- 2 Tbsp. rice vinegar
- 1 tsp. red pepper flakes
- 3 cloves garlic
- 2-3 Tbsp. creamy peanut butter
- Chopped green onions (about 1/2 cup)
- roasted chop peanuts (about 1/4 cup)
- 1 lime sliced into wedges
Jack Daniels Brownie With Caramel Sauce

- 1 cup Jack Daniels Whisky
- 1 - 2 eggs (if required)
- 2 tablespoons Vegetable/cooking oil (if required)
- Ingredients for Caramel Sauce
- 1 quart Caramel Topping
- 2/3 cup Jack Daniels Whiskey
- 2/3 cup Dried cranberries
- 1 cup canned peaches (drain the syrup)
- Ingredients for Roasted Pecan topping
- 2 cups Pecan halves
- 1/2 teaspoon cinnamon
- 2 egg whites
Chocolate Truffle Tart

MAKE CRUST: 1. Put oven rack in middle position and preheat oven to 350°F
- For Crust:
- 28 chocolate wafers finely ground in a food processor (about 1 cup)
- 6 Tbsp unsalted butter, melted and cooled completely
- For Filling:
- 1/2 lb fine-quality bittersweet chocolate (no more than 60% cacao), coarsely chopped
- 6 Tbsp unsalted butter, cut into 1/2-inch cubes
- 2 large eggs, lightly beaten
- 1/3 cup heavy cream
- 1/4 cup granulated sugar
- 1/4 tsp salt
- 1 tsp pure vanilla extract

- 2 cans (8 ounces each) DOLE® Crushed Pineapple in 100% Pineapple Juice
- 1 package (3.4 ounces) instant pistachio pudding mix
- 1 carton (12 ounces) frozen whipped topping, thawed
- 2 cups halved green grapes
