Blueberry Crunch Coffee Cake

Three things I love in a recipes: Healthy, easy, and devastatingly delicious
- 3/4 cup all-purpose flour
- 3/4 cup whole wheat flour
- 3/4 cup raw sugar or 3/4 cup demerara sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/4 vegetable oil
- 1 egg
- 1/2 cup milk
- 3/4 cup blueberries, fresh or thawed
- 1/3 cup raw sugar or 1/3 cup brown sugar or 1/3 cup demerara sugar
- 1 tablespoon white flour or 1 tablespoon wheat flour
- 1 tablespoon rolled oats
- 1 teaspoon ground cinnamon
- 1/3 cup broken pecans or 1/3 cup walnuts
- 2 tablespoons softened butter
Cheddar Burger Mashed Potato Bake

Makes 8 servings Preheat oven to 425°F
- 2 pounds ground beef
- 1 medium onion, chopped
- 1 jar (1 pound) RAGÚ® Cheesy! Double Cheddar Sauce
- 2 teaspoons dry mustard
- 4 cups prepared mashed potatoes
Loaded Mashed Potato Casserole

Combine all ingredients except Cheddar cheese and bacon in a large mixing bowl
- 5 1/2 cups mashed potatoes
- 1/2 cup milk
- 8-oz. pkg. cream cheese, softened
- 8-oz. container sour cream
- 2 teaspoons dried parsley
- 1 teaspoon garlic salt
- 1/4 teaspoon ground nutmeg
- 3/4 cup shredded Cheddar cheese
Garlic Fries

- 1 cup plain flour

- 1 cup light brown sugar
- 1 teaspoon vanilla extract
- 1 large egg
Espresso Chocolate Chip Shortbread

Dissolve espresso powder in boiling water
- 1 tbsp instant espresso powder (I like Medaglia D’Oro)
- 1 tbsp boiling water
- 8 oz. unsalted butter, room temperature
- 2/3 cup confectioners’ sugar
- 1/2 tsp vanilla extract
- 2 cups all-purpose flour
- 4 oz. bittersweet chocolate, finely chopped OR 3/4 cup store-bought mini chocolate chips
