Blackberry Buttermilk Cupcakes

1. Position two racks as close to the center as you can
- 1 1/2 sticks unsalted butter, room temp
- 2 1/3 cups cake flour
- 2 1/2 cups (10oz) fresh blackberries
- 1/4 cups plus 1 1/3 cups sugar
- 1 1/2 tsp baking powder
- 3/4 tsp salt
- 1/2 tsp baking soda
- 3 large eggs, room temp
- 2 tsp vanilla extract
- 1 1/2 tsp finely grated orange zest
- 1 cup well shaken buttermilk
Butternut Squash Soup

Heat the oil, add the onion and cook until it has just softened but not browned
- 1 tablespoon oil
- 1 large onion, chopped
- 2 tablespoons curry powder
- 1 large butternut squash, peeled and chopped
- 4 1/4 cups chicken stock or vegetable, homemade or canned
- 2/3 cup yogurt
- 2 tablespoons mango chutney
Banana Bread With Greek Yogurt

1. Preheat oven to 350°F
- 2 cups all-purpose flour
- 1 cup sugar
- 3/4 teaspoon baking soda
- 1/2 teaspoon sea salt
- 1/4 cup butter, melted
- 2 large eggs
- 11/2 cups mashed ripe banana (about 3 bananas)
- 1 (6-ounce) container nonfat Greek yogurt (I used Fage)
- 1/2 cup chopped walnuts (optional)
- 1 teaspoon vanilla extract
- 1 Cooking spray
Captain Morgan v. Cap’n Crunch Overnight French Toast

Sprinkle the brown sugar over the bottom of 2 9×13 inch baking dishes, covering them evenly
- 1 c firmly packed brown sugar
- 8 tbl unsalted butter, melted
- 3 eggs
- 1 c milk
- 2 tbl Captain Morgan
- 2 t vanilla extract
- 1 t ground cinnamon
- 1 loaf Challah bread, sliced
- grated nutmeg
- 2 c Cap’n Crunch
- Pure maple syrup, warmed (that means Vermont, kids!)
Meatball Pizza Casserole

- 3 oz. (1 cup) uncooked rotini (spiral pasta)
- 1/4 lb. frozen precooked Italian meatballs, slightly thawed (about 4 meatballs)
