Oven Baked Frito Pie

Cook ground beef until meat is browned; drain
- 1 lb. lean ground beef
- 1 can (16 oz) chili beans
- 1 can (8 oz) tomato sauce
- 1 can (15 oz) diced tomatoes
- 1 envelope low sodium taco seasoning
- 1 cup shredded cheddar cheese (2% fat kind)
- 3 1/2 cups corn chips (Frito's)
- 1 1/4 cup fat free sour cream
Shirley Temple Cupcakes

First preheat your oven to 350 degrees and line your cupcake tray with cupcake liners
- Frosting:
- 1 1/2 cups plus 1 tablespoon all purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon fine sea salt
- 1/2 cup unsalted butter, at room temperature
- 1 cup granulated sugar
- 2 large eggs, at room temperature
- 1/2 cup 7-Up, at room temperature
- 1 teaspoon pure vanilla extract
- 1 tablespoon maraschino cherry juice
- Several drops of red food coloring
- 1/2 cup unsalted butter, at room temperature
- 1 large pinch of fine sea salt
- 2 1/2 cups confectioners sugar
- 1/2 teaspoon pure vanilla extract
- 1 teaspoon freshly squeezed lemon juice
- 1 tablespoon maraschino cherry juice
- 12 maraschino cherries, patted dry with paper toweling
Indian Summer Raspberry Peach Sangria

Pour red wine, peach schnapps, pomegranate and lemon juice into large pitcher and stir
- 1 bottle of red wine (I use Don Quixote Tempranillo)
- 1/2 cup peach schnapps
- 1/2 cup pomegranate juice
- 1/2 cup fresh lemon juice (use fresh lemons!)
- 2 peaches, sliced
- 1 orange, sliced
- 2 lemons, sliced
- 1/2 pint of raspberries (rinsed and put into freezer)
- 24 ounces of raspberry flavored soda water (or plain club soda)

Preheat oven to 350F. In a large mixing bowl, cream together butter and sugar
- 1 cup (2 sticks) room temperature butter
- 1/2 cup sugar
- 2 cups all purpose flour
- 1/4 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp vanilla extract
- 1 tbsp milk
- 1 1/2 cups creamy peanut butter
- 1 cup confectioners’ sugar
- 1 tsp salt
- 1/2 tsp vanilla extract
- 2 containers of Dolci dipping chocolate (or 12 oz bag of semi-sweet chocolate chips)
White Chocolate Lemon Truffles

Melt chocolate, butter and cream over a double boiler or in a microwave
- 1 cup white chocolate
- 5 Tbsp. unsalted butter
- 3 Tbsp. heavy cream
- pinch salt
- 1 tsp. lemon extract
- icing sugar, for dusting
Tropical Pineapple Baked Pancake and Coconut Syrup

Preheat oven to 400 F. Beat eggs lightly in a large bowl
- 2 tablespoons butter
- 2 large eggs
- 1/2 cup all purpose flour
- 1/2 cup milk
- 1/4 teaspoon salt
- 2 Tbsp packed brown sugar
- 1/4 tsp ground cinnamon
- 1 cup of chunk pineapple
- toasted coconut (spread 3 tablespoons of coconut on a paper plate and toast in the microwave for one minute stirring every thirty seconds till brown.)
- two or three fresh strawberries sliced
- whipped cream
- favorite syrup
- orange slices
- Coconut Syrup
- 8 tablespoons butter
- 3/4 cup coconut milk
- 1 cup sugar
- 1/2 teaspoon baking soda
- 1 teaspoon vanilla or coconut extract
- 2 tablespoons of shredded coconut (put through food processor)
- Very Berry Syrup
- 1 2/3 cups water
- 2/3 cup sugar
- 2 tablespoons corn syrup
- 2 Tbsp. cornstarch
- 3 oz. pkg. raspberry gelatin mix (I've used strawberry in a pinch)
- 8 oz. fresh or frozen raspberries, thawed blotted dry

French Onion Mac 'n' Cheese

In a skillet, melt 2 tablespoons butter over medium-high heat
- 4 tablespoons butter
- 2 large onions, very thinly sliced
- 1 teaspoon ground thyme
- 1 teaspoon ground thyme
- 1 bay leaf
- Salt and pepper
- 1 pound penne rigate or whole wheat penne rigate pasta
- 2 tablespoons flour
- 1 cup chicken stock
- 1 cup whole milk
- Freshly grated nutmeg
- 3/4 pound gruyere cheese, shredded

Preheat oven to 375°F. Whisk together flour, salt, and baking soda
- 2 cups plus 2 tablespoons all-purpose flour
- 3/4 teaspoon salt
- 1/2 teaspoon baking soda
- 1/2 cup (1 stick) unsalted butter, room temperature
- 1 cup granulated sugar
- large egg
- 1/2 teaspoon pure vanilla extract
- large ripe peaches (about 8 ounces each)peeled, pitted, and chopped into 1/4-inch pieces (1-3/4 cups)
- 1/3 cup peach jam or preserves
- tablespoons fine sanding sugar
- 1/8 teaspoon ground cinnamon

- 2 1/2 cups sugar
- 3 tablespoons cornstarch
- 1 cup light corn syrup
- 1 1/3 cups water (room temperature)
- 2 tablespoons butter softened, plus a lot more for buttering hands
- 1 teaspoon salt
- 1 6g package unsweetened fruit flavored drink mix (like Kool Aid)
