Crockpot Teriyaki Chicken

Mmmm, mmm the smell of the soy infused chicken cooking is like heaven to the senses
- 12 chicken thighs, boneless skinless (about 3-pounds)
- 3/4 cup sugar
- 3/4 cup soy sauce
- 6 tablespoons cider vinegar
- 3/4 teaspoon ground ginger
- 3/4 teaspoon garlic, minced
- 1/4 teaspoon pepper
- 4 1/2 teaspoons cornstarch
- 4 1/2 teaspoons cold water
- Hot cooked long grain rice
Monkey Bread with Bourbon Crème Anglaise

Sprinkle the yeast and a pinch of sugar over warm water and let sit until foamy, about 10 minutes
- For the dough
- 1/4 cup warm water (105-110 degrees)
- 1 envelope (2 1/4 teaspoons) active dry yeast
- 1 1/4 cups whole milk
- 2 tablespoons unsalted butter
- 1 egg, lightly beaten
- 1/4 cup sugar
- 1 teaspoon salt
- 4 cups all-purpose flour, plus more as needed
- For the caramel coating
- 1 1/4 cups dark brown sugar
- 2 teaspoons ground cinnamon
- 1/2 cup (1 stick) unsalted butter, melted
- For the bourbon crème anglaise
- 1 cup heavy cream
- 1 cup milk
- 6 large egg yolks
- 1/3 cup sugar
- Pinch of kosher salt
- 2 tablespoons bourbon
- 1/2 teaspoon pure vanilla extract
Gnocchi, Chicken, and Pesto

- 1 (18 ounce) bag gnocchi
- 1 (7 ounce) container pesto sauce
- 1 lb boneless skinless chicken breast
- 1/4 cup parmesan cheese, grated

Peanut Butter Chocolate Chip Shortbread Cookies

Cream the butter and the peanut butter together in a stand mixer, with a hand mixer, or a wooden spoon
- 1 stick, (1/2 cup) unsalted butter, room temp
- 1/3 cup creamy peanut butter
- 1/2 tsp vanilla extract
- 1 1/4 cup all purpose flour
- 1/4 cup confectioner's sugar
- scant 1/2 tsp sea salt
- 3/4 cup milk chocolate chips
Ameretto Apple Struesel Cupcakes

Preheat oven to 350 F. Line a 12-cup muffin tin with paper liners
- Streusel
- 2 tablespoons all-purpose flour
- 2 tablespoons light brown sugar
- 1/4 teaspoon ground cinnamon
- 2 tablespoons butter, chilled
- 2 tablespoons sliced almonds
- Cupcakes
- 6.75 ounces (about 1 1/2 cups) all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 teaspoon baking soda
- 3/4 cup granulated sugar
- 1/4 cup (2 ounces) reduced fat cream cheese, softened
- 1/4 cup butter (4 tablespoons), softened
- 2 tablespoons amaretto
- 1 teaspoon vanilla extract
- 1 egg
- 1/2 cup reduced-fat sour cream
- 1/4 cup milk
- 3/4 cup finely chopped Gala (or your favorite - I used Macintosh) apple
- 1 tablespoon all-purpose flour

- 1 cup confectioners' sugar
- 4 teaspoons 2% milk
Peach Streusel Muffins

Toast the pecans in a pan over medium-high heat for a few minutes
- Pecan Streusel Ingredients:
- 1/2 cup pecans, chopped
- 1/4 cup all-purpose flour
- 2 tablespoons unsalted butter, melted
- 1/3 cup brown sugar, packed firmly
- 1 teaspoon ground cinnamon
- Peach Muffin Ingredients:
- 1 1/4 cup frozen sliced peaches, thawed and chopped
- 1/4 cup milk
- 1 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon ground cinnamon
- 1/2 cup granulated sugar
- 1/4 teaspoon salt
- 1 large egg
- 1/2 cup unsalted butter, melted
Lemon Blossoms

- Glaze:
- 8 1/2-ounce package yellow cake mix
- 3 1/2-ounce package instant lemon pudding mix
- 4 large eggs
- 3/4 cup vegetable oil
- 4 cups confectioners' sugar
- 1/3 cup fresh lemon juice
- 1 lemon, zested
- 3 tablespoons vegetable oil
- 3 tablespoons water
Creamy Coconut Shrimp

Step 1: In a wok heat olive oil over medium-high heat
- 1 lb jumbo shrimp (peeled and deveined with tails off)
- Salt and pepper
- 1 tablespoon olive oil
- 1 green onion (chopped)
- 1 tablespoon amaretto liquor
- 1/2 cup coconut milk
- 1/4 cup heavy cream
- 2 tablespoons sugar (or less)
- 1 teaspoon coconut extract
- 1 teaspoon vanilla extract
Strawberry Marshmallow Pie

Heat oven to 450°F. Make 1 pie crust as directed on box for One-Crust Baked Shell using 9-inch glass pie plate
- 1 box Pillsbury® refrigerated pie crusts, softened as directed on box
- 2 packages (8 oz each) cream cheese, softened
- 1 jar (13 oz) marshmallow creme
- 4 cups sliced fresh strawberries
- 1 container (12 to 14 oz) strawberry pie glaze
