Apple Cake with Brown Sugar Glaze

For the cake: Heat the oven to 350 degrees F
- Apple Cake:
- 1 1/2 cups all purpose flour
- 1 cup sugar
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 2 eggs
- 1/2 cup canola oil
- 1 teaspoon vanilla
- 1 1/2 cups finely chopped apples
- 1/2 cup pecans or walnuts, chopped (optional)
- Brown Sugar Glaze:
- 1/2 cup packed light brown sugar
- 3 Tablespoons butter
- 1/2 teaspoon vanilla
- 1 Tablespoon heavy cream

Pineapple Cheesecake Bar

Preheat oven to 350 degrees F
- 1 1/3 cups all-purpose bleached flour
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter (1 stick softened)
- 8 ounces cream cheese, at room temperature
- 1 cup powdered sugar
- 1 large egg
- 1/4 cup granulated sugar
- 1 cup crushed pineapple or 1 (8-ounce) can, drained
- 1/2 teaspoon pure vanilla extract
- 1/2 cup white chocolate chips
- 1/2 cup chopped macadamia nuts
Mini Mac and Cheese Pies

1. Preheat the oven to 350 degrees
- 1 and 1/2 cups Ritz crackers, crushed**I used one whole sleeve and used my food processor to crush the crackers
- 2 cups white cheddar cheese, grated and divided
- 4 tablespoons unsalted butter, melted
- 4 and 1/2 cups cooked elbow macaroni (about 8 ounces uncooked)
- One 5.2-ounce container of Boursin Garlic and Herb cheese
- 2 tablespoons unsalted butter, cold
- 2 large eggs
- 1/2 cup milk
- 1/4 cup sour cream
- 1/4 teaspoon salt
- Pinch red pepper flakes
- Parsley, for garnish, optional

Melt chocolate and shortening over a double boiler, stirring to melt
- 3 cups good quality chopped milk chocolate
- 4 tablespoons shortening
- 12 halved graham crackers
- 2 cups creamy peanut butter
Raspberry Lemon Thumbprint Cookies

Preheat the oven to 350 degrees F
- 1/2 cup raspberry jam or jelly
- 1 tablespoon Chambord or kirsch
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 2 sticks (1 cup) butter, at room temperature
- 2/3 cup sugar
- 2 large egg yolks
- 1 tablespoon finely grated lemon zest
- 1 tablespoon fresh lemon juice
- 1 teaspoon pure vanilla extract
Cheddar-Bacon Dip

In a bowl, beat cream cheese and sour cream
- 1 package (8 ounces) cream cheese, softened
- 1 cup (8 ounces) sour cream
- 5 green onions, thinly sliced
- 4 medium tomatoes, chopped
- 1 large green pepper, chopped
- 1 jar (16 ounces) taco sauce
- 2 cups (8 ounces) shredded cheddar cheese
- 1 pound sliced bacon, cooked and crumbled
- Tortilla or nacho tortilla chips
Brisket & Brie Quesadillas with Mango Barbecue Sauce

To make the brisket: Rub the meat with salt, pepper, chili powder, and garlic
- Brisket
- 3 lb brisket
- Salt
- Ground black pepper
- 1 Tbsp chili powder
- 3 cloves garlic, minced
- 16 oz Dublin Dr. Pepper (made with real sugar)
- Mango Barbecue Sauce
- 1 1/2 Tbsp olive oil
- 1 medium yellow onion, chopped (about 3/4 – 1 cup)
- 1 clove garlic, minced
- 1/2 cup ketchup
- 2 Tbsp lemon juice
- 1 1/2 Tbsp Worcestershire sauce
- 1 1/2 tsp Creole (spicy brown) mustard
- Salt
- Pepper
- 1/4 cup mango chutney (1/4 cup homemade or purchased)
- Quesadillas
- 8 8-in flour tortillas
- 8 oz brie, thinly sliced
- 1 cup monterrey jack, shredded
- olive oil or cooking spray, to brush tortillas
- cilantro, for garnish (optional)
Southern Beef and Sausage Goulash

Heat oil in a large pot over medium heat; saute the celery, green pepper and onion until softened
- 2 tablespoons of olive oil
- 1/2 cup of chopped celery
- 1/2 cup of chopped green bell pepper
- 1/2 of a large onion, chopped
- 1 pound of ground beef
- 1/2 pound of Italian sausage
- 1/4 pound of andouille sausage, chopped
- 3 garlic cloves, chopped
- 1 tablespoon Italian seasoning
- 2 large pinches of kosher salt
- 8 turns of the pepper grinder
- 1/2 teaspoon of Cajun seasoning (like Slap Ya Mama)
- 1 (8 ounce) can of tomato sauce
- 1 can of Rotel diced tomatoes
- 1 (14.5 ounce) can of stewed tomatoes
- 2 bay leaves
- 1 tablespoon of dried parsley
- 2 cups of beef broth
- 2 cups of uncooked, elbow macaroni noodles
Peanut Butter Banana Smoothie
