Mexican Soup

Put all ingredients in crockpot
- 2 Cans Rotel
- 2 Cans Corn
- 2 Cans Black Beans (drained and rinsed)
- 4 Frozen Chicken Breasts
- 16 oz cream cheese
- 2 packets dry ranch dressing
- 2 T cumin
- 2 t onion powder
- 2 t chili powder
Almond Citrus Olive Oil Cake

- Cake:
- 1 1/2 C all purpose flour
- 2 t baking powder
- 1/2 t salt
- 1 C sugar
- 3 large eggs
- 2 t orange zest
- 2 t lemon zest
- 1/4 C whole milk
- 3/4 C extra virgin olive oil
- 2/3 C sliced almonds, toasted and coarsely crumbled
- Powdered Sugar for sifting
- Citrus Compote:
- 2 T grated orange peel
- 3/4 t orange blossom water (optional)
- 3 oranges, segmented
- 2 pink grapefruits, segmented
Strawberry Pretzel Salad

Preheat oven to 400 degrees F (200 degrees C)
- Crust
- 2 cups crushed pretzels
- 3/4 cup butter, melted
- 3 tablespoons white sugar
- Cream Layer
- 1 (8 ounce) package cream cheese, softened
- 1 cup white sugar
- 1 (8 ounce) container frozen whipped topping, thawed
- Strawberry Layer
- 2 (3 ounce) packages strawberry flavored gelatin
- 2 cups boiling water
- 2 (10 ounce) packages frozen strawberries or 2 1/2 cups fresh strawberries
Garlic Mashed Cauliflower

This alternative to mashed potatoes is a tasty way to get your recommended daily vegetable intake
- 4 cups cauliflower, chopped
- 2 tablespoons light cream cheese
- 2 tablespoons light sour cream
- 1 tablespoon skim milk
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon low-sodium chicken bouillon granules
- 1 teaspoon chives
- Salt and pepper to taste
Roasted Cauliflower Soup

Preheat oven to 380F. Place onion and cauliflower in a large oven proof dish and drizzle with olive oil
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 1 cauliflower, broken into pieces
- 3 cups chicken stock
- 1 cup cream
- salt and pepper
- star toast, use a cookie cutter and cut out stars from toasted bread
Saltine Cracker Toffee

- 40 salted saltine crackers or enough to line your pan
- 1 cup unsalted butter
- 1 cup packed brown sugar
- 2 cups milk chocolate or semisweet chocolate chips
- (optional) 3/4 cup chopped pecans
Root Beer Cookies

In a large bowl, cream butter and brown sugar
- FROSTING:
- 1 cup butter, softened
- 2 cups packed brown sugar
- 2 eggs
- 1 cup buttermilk
- 3/4 teaspoon root beer concentrate
- 4 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1-1/2 cups chopped pecans
- 3-1/2 cups confectioners' sugar
- 3/4 cup butter, softened
- 3 tablespoons water
- 1-1/4 teaspoons root beer concentrate or extract
Crockpot Beef Fajitas

- 1 1/2 pounds of Sirloin Steak
- 1 envelope dry onion soup mix
- 2 cups water
- Sautéed onion & green pepper
- 1 small can diced green chilies
- Flour tortillas

- 5 Tablespoons Confectioners Sugar
- 1 Tablespoon Room Temperature, Unsalted Butter
- 1 cup Pretzels, Crushed
- 5 ounces, weight Melted Milk Chocolate
Bourbon Street Chicken

Heat oil in a large skillet
- 2 pounds boneless chicken breasts; cut into bite-size pieces
- 1 tablespoon olive oil; (1-2)
- 1 garlic clove; crushed
- 1/4 teaspoon ginger
- 3/4 teaspoon crushed red pepper flakes
- 1/4 cup apple juice
- 1/3 cup light brown sugar
- 2 tablespoons ketchup
- 1 tablespoon cider vinegar
- 1/2 cup water
- 1/3 cup soy sauce
- 1 tablespoon cornstarch; (if thick sauce desired)
