Three Cheese Chicken Alfredo Bake

Prepare pasta according to package directions; drain and return to pot
- 1 (16-ounce) package penne or elbow macaroni
- 2 (10-ounce) containers refrigerated Alfredo sauce
- 1 (8-ounce) container sour cream
- 1 (15-ounce) container ricotta cheese
- 2 garlic clove, minced
- 3 cups cooked chicken, chopped
- 2 large eggs, lightly beaten
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 2 cups mozzarella cheese
Spiced Rum Banana Bread

Preheat oven to 350 degrees
- Bread
- 2 cups AP flour
- 1 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup butter, room temperature
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 2 eggs
- 1 cup bananas, smashed
- 1/4 cup applesauce
- 1/4 cup spiced rum (We used Captain Morgans)
- 1/2 tsp vanilla
- 3/4 cup pecans or walnuts, chopped
- Rum Glaze
- 1/4 cup butter
- 1/4 cup brown sugar
- 1/4 cup white sugar
- 2 tablespoons spiced rum
- 2 tablespoons water
- 2 tablespoons pecans or walnuts to garnish, chopped
Asian Inspired Shredded Beef and Rice

1. Halve the roast and place the pieces in your slow cooker
- 2 to 2 1/2 lbs chuck roast (mine was partially thawed...if yours is still somewhat frozen add 1-2 hours to the cooking time)
- 1/4 cup brown sugar
- 3 Tbsp soy sauce
- 1/2 cup diced onion
- 1 Tbsp rice wine vinegar (plus more for serving)
- 1 Tbsp sesame oil
- 1 tsp freshly grated ginger
- 1 packed Tbsp minced garlic
- Salt and pepper
- 1/4 or 1/2 head of cabbage
Salt Water Taffy

Prepare a heat safe dish by lightly buttering it
- 2 cups sugar
- 2 T. Cornstarch
- 1 cup light corn syrup
- 3/4 cup water
- 2 T. margarine/butter
- 1 tsp. salt
- 1/4 tsp. Flavoring oil
- (I didn't have flavoring oil so I used a tablespoon or more of Mint extract)
Japanese Chicken Curry

Toss the chicken in the 1/4 cup of cornstarch
- 2 pounds boneless skinless chicken thighs with skin on, cut into 1-inch chunks
- 1/4 cup cornstarch
- 2 tablespoons vegetable oil
- 2 large yellow onions, chopped
- 4 cloves garlic, finely chopped
- 1 tablespoon grated fresh ginger
- 4 teaspoons curry powder (I use S&B)
- 2 teaspoons kosher salt
- 3 carrots, cut into chunks
- 2 large potatoes (Russet or Yukon Gold), cut into chunks
- 2 tablespoons tomato paste
- 2 tablespoons apricot jam
- 1 tablespoon rice wine vinegar
- 2 cups vegetable stock
- 3 cups water
- 1 teaspoon honey, if needed
- 1 tablespoon cornstarch
- Hot steamed Japanese rice, for serving
Turkish Delight

1. Boil the sugar with the lemon juice and 3/4 cups of water
- 2 cups sugar
- 2 1/4 cups water
- Juice of 1/2 lemon
- 1/2 cup cornflour
- 1/2 teaspoon cream of tartar (this stops the mixture from crystalising)
- 1/2 tbsp essence of rose water
- 1/2 cup icing sugar (confectioners’ sugar for Americans)
- 1/8 cup extra cornflour

- APPLE FILLING:
- 3 medium-size Granny Smith apples
- 3 tablespoons granulated sugar
- 1 1/2 teaspoons cinnamon
- 2 teaspoons lemon juice
- BREAD:
- 2 1/2 cups bread flour
- 1/4 cup granulated sugar
- 1 tablespoon instant yeast (I prefer SAF Instant Yeast)
- 3/4 teaspoon salt
- 1 cup warm water
- 2 1/4 teaspoons vegetable oil
- GLAZE:
- 1/3 cup confectioner’s sugar, sifted
- 5 teaspoons whipping cream
- 1/2 teaspoon vanilla extract
- Pinch of kosher salt
- Pinch of nutmeg
Peanut Butter Bars

Preheat oven to 350 degrees
- FOR THE TOPPING:
- 3/4 cup butter
- 3/4 cup brown sugar
- 3/4 cup sugar
- 3/4 cup peanut butter
- 2 eggs
- 1 tsp. vanilla
- 3/4 tsp. soda
- 1/2 tsp. salt
- 1 -1/2 cups flour
- 1 -1/2 cups oatmeal

- 3/4 cups Peanut Butter
- 1 cup Granulated Sugar
- 1/2 cups Evaporated Milk
- 5 Tablespoons Butter
- 1 cup Milk Chocolate Chips
Taco Pie

1. Preheat oven to 350 degrees
- 1/4 cup butter
- 2/3 cup milk
- 1 package taco seasoning mix
- 2 1/2 cups mashed potato flakes (you could also use left over mashed potatoes and omit the butter and milk)
- 1 pound ground beef
- 1/2 cup chopped onion
- 1/2 cup salsa
- 1 cup shredded lettuce
- 1 medium tomato, chopped
- 1 cup sharp cheddar cheese, shredded
- Sour cream, optional
Pineapple Banana & Coconut Cream Smoothie

Blend everything in blender until smooth
- 1 banana (previously frozen is ideal but not essential)
- 1 c pineapple (I used canned in juice, but fresh would be great)
- 1/2 c coconut milk (canned, fresh, cream of coconut, or coconut creme concentrate)
- 1/2 tsp vanilla extract
- 1 c ice cubes
- 1/4 c sugar, optional
