Cheesy Zucchini Rice

Heat the olive oil in a medium sauce pan over medium heat
- 1 tablespoon olive oil
- 1 cup long-grain white rice
- 2 cups chicken broth
- 2 tablespoons butter
- 1 medium or 2 small zucchini, grated (I used my food processor but a cheese grater would work well, too)
- 1 cup shredded sharp cheddar
- 1/2 teaspoon garlic powder
- salt and pepper, to taste
- splash of milk, as needed
Pecan Pie Bars

Preheat the oven to 350ºF and line a 9x13-inch pan with foil, leaving enough for a 2-inch overhang on all side...
- For crust:
- 2 sticks unsalted butter, softened
- 2/3 cup packed brown sugar
- 2 2/3 cups all-purpose flour
- 1/2 teaspoon salt
- For topping:
- 1 stick (1/2 cup) unsalted butter
- 1 cup packed light brown sugar
- 1/3 cup honey
- 2 tablespoons heavy cream
- 2 cups chopped pecans
Jewels Turkey-Jasmine Burgers

Cucumber salad: Toss cucumbers, onions, rice vinegar, sugar, and salt in a medium sized bowl
- Cucumber Salad
- 1 cucumber, peeled and thinly sliced rounds
- 1/2 red onion, thinly sliced
- 1/4 cup rice vinegar
- 1/8 cup sugar
- 1 teaspoon salt
- Turkey Burger
- 1 1/4 pounds ground turkey
- 1/3 cup steamed jasmine rice
- 1/4 cup panko
- 1/4 cup thinly sliced green onions
- 1 large egg
- 1/2 teaspoon sesame oil
- 1 tablespoon soy sauce
- 1 Thai chili or serrano chile, seeded and minced
- 1 teaspoon sugar
- Salt and freshly ground black pepper
- 1 tablespoon peanut oil
- 4 sesame hamburger buns
- Mayo
- 1/2 cup homemade mayonnaise or store-bought
- 1 teaspoon wasabi powder
- 1/2 teaspoon minced ginger

Bourbon Pecan Pound Cake

Preheat oven to 325 degrees F
- Batter:
- 1 1/2 cups finely chopped pecans
- 1 tablespoon plus 2 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup best Kentucky bourbon, or whiskey
- 2 teaspoons pure vanilla extract
- 1 cup unsalted butter, room temperature
- 1 cup firmly packed light brown sugar
- 1 cup granulated sugar
- 4 large eggs, warmed to room temperature
- 3 large egg yolks, warmed to room temperature
- Topping:
- 1 to 2 tablespoons confectioner's (powdered) sugar
Crowned Beef Bake

In a large skillet, cook beef over medium heat until no longer pink; drain
- 1 pound ground beef
- 1 can (4 ounces) mushroom stems and pieces, drained
- 1 can (2.8 ounces) french-fried onions, crumbled, divided
- 2 cups frozen mixed vegetables
- 1 can (10-3/4 ounces) condensed cream of celery soup, undiluted
- 1 cup (8 ounces) sour cream, divided
- 1 tube (7-1/2 ounces) refrigerated buttermilk biscuits
- 1 egg, lightly beaten
- 1 teaspoon celery seed
- 1/2 teaspoon salt
Asian Dumplings

In a large bowl, combine all ingredients, stirring until well mixed
- 100 (3.5 inch square) wonton wrappers (roughly 2 packages of wrappers; I found them where my grocery store keeps the tofu)
- 1 pound ground pork
- 1/2 pound ground turkey
- 2 tsp grated fresh ginger root
- 4 cloves garlic, minced (I use the “already-minced-for-me-in-a-jar” garlic; so much easier)
- 2 tablespoons thinly sliced green onion
- 3 tablespoons soy sauce
- 2 tablespoons rice wine vinegar
- 1 egg, beaten
- 5 cups finely shredded Chinese cabbage (also known as napa cabbage)
- 1 cup finely shredded kale leaves (do not use the stem)
- 1 cup finely shredded carrots
Apple Doozie (Dessert Pizza)

Place pizza crust on baking sheet and preheat oven to 350
- 1 pizza crust
- 1 can apple pie filling*
- 1/2 cup quick oats
- 1/2 cup dark brown sugar
- 1/2 c flour
- 1/2 stick margarine (1/4 of a cup)
- 1 tablespoon cinnamon
- 1 cup Confectioner's sugar (glaze)
- 2 Tablespoons milk (glaze)
- 1 teaspoon vanila (glaze)
Buttery Cinnamon Sugar Popcorn

Melt butter with the oil in a large pot
- 1/4 cup butter
- 1 tablespoon canola or vegetable oil
- 1/2 cup corn kernels
- 4 tablespoons granulated sugar
- 1 teaspoon fine grain salt (sticks better to the popcorn)
- 1/4 teaspoon freshly ground cinnamon
Banana Cream Cheesecake

In a small bowl, combine cracker crumbs and sugar; stir in butter
- FILLING:
- 1-3/4 cups graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup butter, melted
- 1 package (8 ounces) cream cheese, softened
- 1/2 cup sugar
- 1 carton (8 ounces) frozen whipped topping, thawed, divided
- 3 to 4 medium firm bananas, sliced
- 1-3/4 cups cold milk
- 1 package (3.4 ounces) instant banana cream pudding mix
Chuy's Jalapeno Ranch Dip

- 8 ounces mayonnaise
- 24 ounces sour cream
- 1 cup buttermilk
- 1 cup tomatillo salsa
- 1 handful of cilantro
- 3 ranch dressing packets
