Chocolate-Bourbon Balls

1 Mix chocolate chips and honey in 1 1/2-quart microwavable casserole or bowl
- 1/2 cup semisweet chocolate chips
- 2 tablespoons honey
- 1 1/2 cups finely crushed vanilla wafer cookies (about 27 cookies)
- 1/2 cup ground walnuts
- 1 tablespoon bourbon
- Candy decorations or sugar
Strawberry Daiquiri Cake

Heat oven to 350°F (325°F for dark or nonstick pan)
- Cake
- 1 package Betty Crocker® SuperMoist® white cake mix
- 1 1/4 cups water
- 1/3 cup vegetable oil
- 3 eggs (including yolks)
- 1 box (4-serving size) strawberry-flavored gelatin
- 1 tablespoon grated lime peel
- 1 to 2 1 to 2 teaspoons rum extract
- Lime Frosting
- 1 container (1 lb) Betty Crocker® Rich & Creamy vanilla frosting
- 2 teaspoons grated lime peel
- Garnish
- 8 fresh whole strawberries
Sugar Cookie Bars

COOKIES: Preheat oven to 375 degrees Fahrenheit and grease a 9x13 inch baking dish
- Cookies:
- 2-1/2 cups bread flour (or all-purpose flour is fine)
- 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1/2 cup butter, softened
- 1 cup granulated sugar
- 1 egg
- 1-1/2 Tbsp. sour cream
- 1 tsp. vanilla extract
- Frosting:
- 1/2 cup butter, softened
- 4 cups powdered sugar
- 1/4 cup half and half
- 1 tsp. vanilla
- Pinch of salt
- Several drops of food coloring (optional)
Beef Taco Rice Skillet

In 10-inch skillet, cook beef over medium heat 8 to 10 minutes, stirring occasionally, until brown; drain

- 1 envelope (1 oz) Old El Paso® taco seasoning mix
- 1 1/2 cups water

- 1 cup Green Giant® frozen whole kernel corn (from 1-lb bag)

- 3/4 cup shredded taco-seasoned cheese (3 oz)

- 1 medium tomato, chopped (3/4 cup)

- 4 eggs
- 1 cup half-and-half or milk
- 1 can (12.5 oz) chunk chicken breast in water, drained (1 1/2 cups)
- 1 1/2 cups broken tortilla chips
- 2 cups shredded Monterey Jack cheese (8 oz)
- 1 cup shredded Cheddar cheese (4 oz)
- 1 cup Old El Paso® Thick 'n Chunky salsa
- 1 can (4.5 oz) Old El Paso® chopped green chiles
- 1/2 teaspoon salt
- Pepper to taste, if desired
- Sour cream, if desired

Key Lime Pie Fudge

Line 8x8-inch baking pan with foil or parchment paper (leaving about a 2-inch overhang)
- 1/3 c. unsalted butter
- 1/4 c. sugar
- 1-1/4 c. graham cracker crumbs
- 3 c. or 4 (4 oz. each) bars quality white chocolate, finely chopped
- 1 (14 oz.) can sweetened condensed milk
- 1 tbsp. finely grated Key Lime zest (about 5 to 6 Key Limes)
- 1/4 c. Key Lime Juice
Cauliflower Fritters

In a large bowl, combine cauliflower, flour, garlic, eggs, grated cheese, parsley, salt and pepper
- 4 cups steamed cauliflower (roughly chopped)
- 2 cloves garlic, crushed
- 1 cup whole wheat flour
- 2 eggs
- 1/2 cup Pecorino Romano
- 1/4 cup parsley, finely chopped
- 1/4 cup hot water
- salt and pepper
- 1/4 cup olive oil
Pineapple Cheese Ball

Combine all ingredients together
- 1-1/2 packages (12 oz) cream cheese
- 1 small can crushed pineapple (well drained)
- powdered sugar (to taste- approximately 2-3 Tbsp.)
- green onion (optional-to taste, approximately 2 Tbsp.)
- chopped ham (optional-to taste, approximately 2-3 Tbsp. I used deli meat ham)
- chopped pecans (about 1 cup worth)

- 3/4 pound small pasta of your choice
