Meatloaf with Smothered Mushrooms and Cheesy Cauliflower

Place meat in a bowl. Grate onion using a box or handheld grater directly over the meat bowl
- 1 1/2 to 2 pounds ground beef, pork and veal mix (meatloaf mix) or ground sirloin – your choice
- 1 small onion, peeled and halved
- 4 sprigs fresh sage, finely chopped, about 2 tablespoons
- 1 egg, lightly beaten
- 2 handfuls bread crumbs
- 1 tablespoon Worcestershire sauce, eyeball it
- 1 rounded tablespoon Dijon mustard
- Salt and pepper
- 1/4 cup extra-virgin olive oil, divided
- 1 cup chicken broth
- 1 large head cauliflower
- 1/3 cup, about 3 ounces, Boursin or other garlic and herb soft cheese
- A handful grated Parmigiano-Reggiano or Romano
- 1/8 teaspoon grated nutmeg, eyeball it
- 3 tablespoons chives, chopped or snipped, about 12 blades
- 20 crimini or baby portobello mushrooms
- 1 rounded tablespoon all-purpose flour
- A shot Scotch or dry sherry, optional
- 1 cup beef stock
- 1/4 cup half-and-half or cream, 1 turn of the pan

- 1 (15-ounce) can coconut cream, such as Coco Lopez or Goya
- 3 cups rum of your choice
- 2 teaspoons vanilla extract
- 1 teaspoon ground cinnamon
- 2 cinnamon sticks
- 1 vanilla bean, split in half lengthwise, optional
Pizza Rolls

Preheat oven to 425 degrees
- Pizza Dough
- 1 teaspoon garlic salt
- 2 teaspoons basil
- 1 cup sliced pepperoni, chopped
- 2 cups shredded mozzarella cheese (or pepperjack)
- 1/2 cup shredded Parmesan cheese
Butterfinger Cupcakes

To make the cupcakes, preheat the oven to 350° F
- For the cupcakes:
- 1 1/2 cups plus 2 tbsp. all-purpose flour
- 2 tsp. baking powder
- 1/4 tsp. salt
- 8 tbsp. unsalted butter, at room temperature
- 1 1/2 cups plus 2 tbsp. sugar
- 4 eggs
- Scant 1 cup mashed ripe banana
- 2/3 cup buttermilk
- 12 fun size Butterfinger bars, cut in half
- For the frosting:
- 8 oz. cream cheese, at room temperature
- 4 tbsp. unsalted butter, softened
- 1/2 cup creamy peanut butter
- 3 1/4 cups confectioners’ sugar
- 1 cup frozen whipped topping, thawed
- For garnish:
- 4 fun size Butterfinger bars, coarsely chopped
Strawberry Rhubarb Jam

Fill a canning pot with water, insert the rack and add 4 half pint canning jars
- 4 cups trimmed chopped organic or pesticide-free strawberries
- 4 cups washed and chopped rhubarb
- 1 tablespoon organic, unsalted butter
- 4 tablespoons bottled lemon juice**
- 2 cups organic cane sugar
- 1 tablespoon + 1 teaspoon calcium water
- 5 teaspoons Pomona’s Universal Pectin
- You can use fresh lemon juice, but because bottled juice is more consistent in its acid content, the bottled stuff may be more reliable.

- 1 cup sugar (201g)
- 4 large egg whites
- 3 sticks unsalted butter, room temperature (339g)
- 1/4 cup fresh lemon juice (59ml)
- 1 teaspoon pure vanilla extract
- 2/3 cup raspberry preserves (strained for seeds, if desired)
- 1 1/2 cups sweetened shredded or desiccated coconut
Strawberry Shortcake Rice Krispie Treats

In a large microwave safe bowl, melt marshmallows and butter together
- 2 1/2 c. Rice Krispie Cereal
- 1 heaping cup angel food cake squares
- 2 1/4 c. marshmallows
- 1 1/2 tbsp butter
- 1 c whipping cream
- 2-3 tbsp sugar (depending on how sweet you like it)
