Pear and Greens Salad With Maple Vinigarette

In small bowl, mix all vinaigrette ingredients except oil with wire whisk
- Vinaigrette
- 1/4 cup real maple syrup or maple-flavored syrup
- 2 tablespoons balsamic vinegar
- 1/2 teaspoon Dijon mustard
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 cup canola or vegetable oil
- Salad
- 1/3 cup pecan halves
- 8 cups torn mixed salad greens
- 3 medium pears, peeled, cut into wedges
- 1/3 cup sweetened dried cranberries

- 1 pound fresh broccoli
- 1 cup mayonnaise
- 1/3 cup sugar
- 1/3 cup diced red onion
- 1/3 cup red wine vinegar
- 1 teaspoon salt
- 2 cups seedless red grapes, halved
- 8 cooked bacon slices, crumbled
Pork Dumpling Soup

1. Soak the wood ear mushroom with warm water for about 15 minutes
- 20 Siu Kow or wonton wrappers
- 4 cups (1 liter) water

- 1 small wood ear mushroom
- 6 oz (175 g) ground pork
- 4 oz (100 g) shelled and deveined raw shrimp, cut into small pieces
- 2 peeled fresh or canned water chestnuts, minced
- 1 tablespoon finely chopped green onion (scallion)
- Seasonings
- 1 1/2 teaspoons oil
- 1 teaspoon Chinese rice wine (Shaoxing) or sherry
- 1/2 teaspoon sesame oil
- 3/4 teaspoon chicken bouillon powder
- 1/2 teaspoon fish sauce
- 1/2 teaspoon salt
- 3 dashes white pepper
- Soup
- 1 3/4 cups (425 ml) Homemade Chicken Stock (page 00) or 1 can (14-oz/400-g) store-bought chicken broth
- 1 cup (250 ml) water
- 3 dashes white pepper
- Salt, to taste
- Garnishing

White Chocolate Banana Cream Pie

Preheat the oven to 350 degrees
- 1 5.3ouncebox pure butter shortbread cookies, preferably Walkers, broken
- 1/3 cup walnuts
- 1 1/4 ouncepackage gelatin
- 2 eggs plus 3 egg whites
- 1 2/3 cups reduced-fat (2 percent) milk
- 1/3 cup plus 1/4 cup granulated sugar
- 4 teaspoons cornstarch
- 1 pinch salt
- 3 small bananas, thinly sliced
- 1 1/2 ounces white chocolate, finely chopped, plus about 1/4 ounce for shaving
- 1 tablespoon banana liqueur, such as Hiram Walker
- 1 teaspoon pure vanilla exract
- 3/4 cup heavy cream

Chocolate-Peppermint Poke Cake

Heat oven to 350°F for shiny metal or glass pan (or 325°F for dark or nonstick pan)
- Cake
- 1 box Betty Crocker® SuperMoist® chocolate fudge cake mix
- Water, vegetable oil and eggs called for on cake mix box
- Filling
- 1 box (4-serving size) white chocolate instant pudding and pie filling mix
- 2 cups milk
- 1/2 teaspoon peppermint extract
- Frosting
- 1/4 teaspoon peppermint extract
- 1 container (12 oz) Betty Crocker® Whipped milk chocolate frosting
- 3/4 cup coarsely chopped chocolate-covered peppermint patties (8 candies)
Mushroom Sausage Lasagna

Preheat the oven to 375 degrees
- 12 lasagna noodles
- 4 cups whole milk
- 1 yellow onion, diced
- 1/2 - 1 pound of Italian sausage (ground)
- 12 tablespoons butter, divided (1 stick plus 4 tablespoons)
- 1/2 cup all-purpose flour
- 1 teaspoon freshly ground black pepper
- 1 teaspoon ground nutmeg
- 1 teaspoon dried basil, divided
- 1-1/2 - 2 pounds mushrooms, cleaned, remove stems and sliced (mix the types if you like)
- 1-1/2 cups freshly Five Italian Cheeses, divided
- 1/2 cup Gruyere cheese (or just use more of the Italian Cheeses which you can purchase at grocery)
- Sea salt

Chip Crusted Fish Fillets

- 2 teaspoons canola mayonnaise
- 1/8 teaspoon salt
