Easy Mango Chicken over Coconut Rice

Put chicken breasts in crock pot
- 4-5 chicken breasts (boneless and skinless, I use 3 large breasts)
- 1 can corn, drained
- 1 can black beans, drained and rinsed
- 3 cups mango salsa
- Cumin to taste
- Lemon Pepper to taste

Southern Pecan Pie Bars made with a buttery shortbread crust
- CRUST:
- 1 cup butter, softened
- 2 cups all-purpose flour
- 1/2 cup confectioner's sugar
- PIE:
- 3 eggs
- 1/2 cup sugar
- 1 cup corn syrup
- 1 teaspoon vanilla
- 1/2 stick butter, melted
- Pinch salt
- 2 cups pecans
Eclair Cake

Preheat oven to 400. Lightly grease a 9"X13" glass baking pan
- 1 cup water
- 1/2 cup butter
- 1 cup flour
- 4 large eggs
- 1 (8 ounce) package cream cheese, softened
- 1 large box (5.1 ounces) vanilla instant pudding
- 3 cup milk
- 1 8 oz. container cool whip

Preheat oven to 350° Mix flour, sugar, cinnamon, nutmeg and butter (will be crumbly)
- 2-1/2 cups all-purpose flour
- 1 c. brown sugar, packed
- 3/4 cup butter, softened
- 2 eggs, separated
- 1 cups heavy whipping cream (or milk)
- 1/2 tsp salt
- 1 tsp. cinnamon
- 1/2 tsp nutmeg
- 2-1/4 tsp baking powder
- 1 can (21 oz.) Peach Pie Filling (I like Luck Leaf)
- for icing
- 1 Tbsp. butter
- 1 tsp. vanilla
- 3/4 cup powdered sugar
- 3-5 Tbsp. heavy whipping cream (or milk)
Banana-Stuffed French Toast

Preparation Preheat oven to 350° F
- 1 firm, ripe banana
- 3/4 cup half-and-half
- 2 large eggs
- 1 teaspoon vanilla
- 1/4 teaspoon cinnamon
- 1/4 teaspoon freshly grated nutmeg
- four 1-inch-thick slices day-old challah or brioche
- 2 tablespoons unsalted butter
- confectioners' sugar for dusting
- Accompaniment: warm maple syrup
Coconut Crunch Cookies

In a large bowl, cream butter and sugars until light and fluffy
- 1 cup butter, softened
- 3/4 cup sugar
- 3/4 cup packed brown sugar
- 2 eggs
- 2 teaspoons vanilla extract
- 1 teaspoon almond extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 3/4 teaspoon salt
- 2 cups flaked coconut
- 1 package (11-1/2 ounces) milk chocolate chips
- 1-1/2 cups finely chopped almonds
White Tiramisu Parfait

Bratwurst Stew

In a large saucepan, combine the broth, carrots, celery, onion and seasonings
- 2 cans (14-1/2 ounces each) chicken broth
- 4 medium carrots, cut into 3/4-inch chunks
- 2 celery ribs, cut into 3/4-inch chunks
- 1 medium onion, chopped
- 1/2 to 1 teaspoon dried thyme
- 1/2 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 to 1/2 teaspoon garlic powder
- 3 cups chopped cabbage
- 2 cans (15-1/2 ounces each) great northern beans, rinsed and drained
- 5 fully cooked bratwurst links, cut into 3/4-inch slices

- 4 cups milk
- 1 can condensed cream of potato soup
