Oh What's That? Cheesecake Ball

In a medium bowl, beat together cream cheese and butter/peanut butter until smooth
- 1 8-ounce package cream cheese, softened (not too soft)
- 1/2 cup butter, softened or 1/2 peanut butter (not all natural)
- 1 1/4 cup confectioner’s sugar
- 1/4 cup brown sugar
- 1/2 teaspoon vanilla extract or other flavor of your choice
- 1/2 cup mini chocolate chips (optional)
- 1/2 cup chopped nuts (optional)
- 1/2 cup of mini chocolate chips, nuts, dried fruit, (whatever you want) for the outside of the ball
Crunch Bars

Preheat oven to 375 degrees F (190 degrees C)
- 4 ounces saltine crackers
- 1 cup butter
- 1 cup packed brown sugar
- 2 cups semisweet chocolate chips
- 2 cups chopped walnuts
Creamy Caprese Pasta

Preheat oven to 350 degrees F
- 1 pound whole wheat pasta (noodles such as penne work best)
- 1 cup of your favorite pasta/tomato sauce
- 1/3 cup heavy cream or half and half
- 1/3 cup freshly grated parmesan cheese + more for garnish
- 4 ounces fresh mozzarella, cut into cubes
- 1 pint of grape tomatoes (I cut some in half and left some whole)
- 1 bunch of fresh basil leaves
Pesto Pretzels

Mix 1 1/2 cups warm water (110 degrees F to 115 degrees F), the yeast and agave in a bowl
- 1 1/2 tablespoons dry active yeast
- 1 tablespoon agave nectar
- 2 1/2 cups whole-wheat flour
- 2 3/4 cups all-purpose flour, plus more for dusting
- 1 teaspoon sea salt, plus more for sprinkling
- 2 large eggs
- 1 1/4 cups cream cheese, softened
- 1/2 cup pesto
- Dried basil, for sprinking
Lime Meltaways

Whisk together the flour, cornstarch, and salt in a mixing bowl and set aside
- 1 3/4 cups plus 2 tablespoons flour
- 2 tablespoons cornstarch
- 1/4 teaspoon kosher salt
- finely grated zest of 2 limes
- 2 tablespoons freshly squeezed lime juice
- 1 tablespoon vanilla extract
- 3/4 cups {1 1/2 sticks} unsalted butter, at room temperature
- 1 cup confectioners' sugar, divided
Iced Lemon Cookies

Preheat oven to 350 degrees F
- 4 cups sugar
- 1/2 cup lemon zest, about 6 to 8 lemons
- 4 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons salt
- 2 cups (4 sticks) unsalted butter, cut into 1-inch cubes, chilled
- 5 egg yolks
- 2 teaspoons vanilla extract

Strawberry Cheesecake Muffins

- 1/2 (8 ounce) package cream cheese, softened
- 1/4 cup confectioners' sugar
- 2 1/2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 egg
- 1 1/4 cups milk
- 1/2 cup brown sugar
- 1/3 cup butter, melted
- 1 teaspoon grated lemon zest
- 1/4 teaspoon vanilla extract
- 1/4 cup strawberry jam
Root Beer Float Cake

In a large bowl, combine dry cake mix, 1-1/4 cups root beer, oil and eggs
- 1 package (18-1/4 ounces) white cake mix
- 1-3/4 cups cold root beer, divided
- 1/4 cup canola oil
- 2 eggs
- 1 envelope whipped topping mix (Dream Whip)
Irish Coffee Brownies

These are chewy, but with a bit of crispiness on the outside
- 1 1/4 cups granulated sugar
- 3/4 cup butter or margarine, softened
- 1/2 cup cocoa powder, unsweetened
- 2 eggs
- 1 teaspoon vanilla
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 3/4 cup milk
- 1/4 cup Irish Whiskey
- 2 tablespoons instant coffee crystals
- 1 cup chopped walnuts
- 2-1/2 cups sifted powdered sugar
- 2 tablespoons cocoa powder, unsweetened
- 1 tablespoon Irish Whiskey
- 1 1/4 teaspoon vanilla
- 3 to 4 tablespoons brewed coffee
- Chopped walnuts (optional)
Garlic Parmesan Crusted Pork Chops

Spread Parmesan cheese in a shallow dish
- 4 1/2 -inch thickCenter-cut loin pork chops; (bone-in or boneless)
- 3/4 teaspoon Salt
- 1/2 teaspoon Black Pepper
- 1/2 teaspoon Dried rubbed sage
- 1/2 teaspoon Dried thyme
- 3/4 cups Parmesan cheese; freshly grated
- 2 large Eggs
- 1 tablespoon Vegetable oil
- 1 cup Dried seasoned bread crumbs; (I use Progresso garlic and herb)
- Olive oil; (for shallow frying)
- 4 large cloves Garlic; peeled and chopped
- Lemon wedges; for serving
- Parsley sprigs; to garnish
