- Crust:
- 2 cups graham cracker crumbs (you’ll need about 15 whole sheets)
- 8 Tablespoons butter, melted
- 1/4 cup sugar
- Filling:
- 12 (8 oz) wide mouth, half pint jars (use ones made for canning like Mason or Ball–they won’t crack in extreme temperatures. I bought mine at Wal Mart)
- 8 oz can frozen limeade
- 7 oz (half a 14 oz can) sweetened condensed milk
- 8 oz Cool Whip, thawed
- Cherry Whipped Cream:
- 1 1/2 cup heavy whipping cream
- Jar of maraschino cherries
- 1/4 cup powdered sugar
English Toffee

Place toasted pecans in the bottom of 8 x8 pyrex pan
- 1 cup butter
- 1 cup granulated sugar
- 3 tablespoons water
- 1 cup toasted pecans broken in pieces--Toast in 350 degree oven for about 10 minutes.
- Milk chocolate chips

- CUPCAKES:
- 1 cup cola
- 2 sticks unsalted butter
- 3/4 cup unsweetened cocoa powder (preferably Dutch-process)
- 2 cups all purpose flour
- 2 cups sugar
- 1 1/2 teaspoons baking soda
- 3/4 teaspoon salt
- 2 large eggs , room temperature
- 2/3 cup sour cream at room temperature
- GANACHE FILLING:
- 8 1/2 ounces semi or bittersweet chocolate
- 2/3 cup heavy cream
- 2 tablespoons butter, room temperature
- 1 to 2 teaspoons whiskey
- BUTTER CREAM FROSTING:
- 6 cups confections sugar
- 1 1/2 sticks unsalted butter, room temperatue
- 6 tablespoons Jack Daniels, or other whiskey
- Optional, Haribo gummy colas or gummy lime wedges
Tiramisu Cupcakes

To make the cupcakes, preheat the oven to 350F (175C) whip the butter and sugar together
- For the frosting:
- 100 g butter
- 100 g powdered sugar
- 100 g all-purpose flour
- 2 large eggs
- 2 tbsp instant coffee
- 4-6 tbsp dark rum
- 2 tsp vanilla extract
- 1/2 tsp baking powder
- 8 tbsp Cream Cheese (around 150-180 gms)
- 8 tbsp heavy whipping cream (around 150-200 ml)
- 3/4-1 cup icing sugar (as per taste)
- 1 tsp vanilla extract
Strawberry Watermelon Salsa

Combine all ingredients in a mixing bowl
- 6 strawberries, chopped or sliced
- 1 cup Watermelon, cubed or diced
- 1 teaspoon lemon olive oil (I used Nudo), or fresh lemon juice
- 2 tablespoons fresh cilantro, chopped
- salt, to taste
- 1 tablespoon sugar

In a large bowl, cream the Nutella, shortening and sugar until light and fluffy, about 4 minutes
- 1 jar (13 ounces) Nutella
- 1/4 cup shortening
- 1-1/3 cups sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/3 cup 2% milk
- 2-1/2 cups chopped hazelnuts, toasted, divided
- 1/2 cup confectioners' sugar
Lemon-Limoncello Cupcakes

1. Prepare the cupcakes
- For the cupcakes:
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 cup (1/2 stick) unsalted butter, at room temperature
- 2 ounces cream cheese, at room temperature
- 1 cup granulated sugar
- 3 large eggs
- 2 tablespoons limoncello
- 1/2 cup buttermilk
- 1/4 cup lemon juice
- Zest of one lemon
- For the lemon curd:
- Zest of 2 lemons
- 1/2 cup lemon juice
- 1/4 cup granulated sugar
- 1 egg + 1 egg yolk
- Or just purchase a pre-made, good quality lemon curd.
- For the cream cheese limoncello frosting:
- 1/4 cup (1/2 stick) unsalted butter, at room temperature
- 4 ounces cream cheese, at room temperature
- 1 tablespoon limoncello
- 2 cups powdered sugar, sifted
Bailey's No Bake Cheesecakes

Line a large muffin tin with 6 muffin papers
- 6 butternut snap cookies or other plain sweet cookie
- 1/3 C baileys
- 200 g (7oz) ricotta
- 250 g (9oz) Philidelphia cream cheese
- 1/3 C (60g or 2oz) icing sugar (powdered sugar)
