Summer Spaghetti Salad

Cook spaghetti according to package directions; drain and rinse in cold water
- 1 package (16 ounces) thin spaghetti, halved
- 3 medium tomatoes, diced
- 3 small zucchini, diced
- 1 large cucumber, halved, seeded and diced
- 1 medium green pepper, diced
- 1 medium sweet red pepper, diced
- 1 bottle (8 ounces) Italian salad dressing
- 2 tablespoons grated parmesan cheese
- 1-1/2 teaspoons sesame seeds
- 1-1/2 teaspoons poppy seeds
- 1/2 teaspoon paprika
- 1/4 teaspoon celery seed
- 1/8 teaspoon garlic powder

- 1-1/2 cups graham cracker crumbs
- 1/4 cup butter, melted

Homemade Mushroom Soup

1. Heat olive oil in a sauce pan
- 300 g or 2 cups fresh mushrooms - cleaned and chopped finely (I used a mix of swiss brown and white button)
- 1 tbsp olive oil
- 3 cloves garlic - chopped
- 1 tbsp butter
- 1 tbsp chopped fresh thyme or 1 teaspoon dried thyme
- 1 - 2 bay leaf
- 1 tsp Worcestershire sauce
- 1 cup chicken or vegetable stock
- 1 tbsp flour dissolved in 1 tbsp water
- Salt to taste
- 1/2 cup heavy cream
- 1/2 cup milk
- Dash of nutmeg
- Freshly ground black pepper to taste
- Fresh parsley or thyme for garnish
Enchilada Suiza Mexican Lasagna

Preheat the broiler or the oven to 400 degrees
- 2 tablespoons extra-virgin olive oil (EVOO)
- 2 pounds ground chicken or turkey breast
- 1 tablespoon ground cumin
- 1 tablespoon ground coriander
- Salt and pepper
- 1 15 ouncecan hominy, rinsed
- 1 red onion, chopped
- 2 jalapeno or serrano chiles, chopped
- 3 cloves garlic, grated or finely chopped
- 12 large or 14 small tomatillos, peeled and coarsely chopped
- 1/3 cup cilantro or flat-leaf parsley leaves (a generous handful)
- 2 avocados
- Grated peel and juice of 2 limes
- 1 tablespoon honey
- 1 11 ouncepackage flour tortillas
- 1/2 pound monterey jack cheese, shredded
- 1/2 pound Swiss cheese, shredded
- 1 cup creme fraiche or sour cream
Baked Shells With Winter Squash

Preheat oven to 400 degrees
- Butter, for baking dish
- 4 tablespoons olive oil
- 2 large onions, halved and thinly sliced
- Coarse salt and ground pepper
- 2 teaspoons chopped fresh rosemary leaves
- 1 pound small pasta shells
- 1 package (12 ounces) frozen winter squash puree, thawed
- 1 cup grated Parmesan cheese
- 3 slices crusty baguette, cut into 1/4-inch cubes (1 1/2 cups)
Pineapple Fried Rice

Bring the rice and water to a boil in a saucepan over high heat
- 1 cup uncooked white rice
- 2 cups water
- 2 tablespoons sesame oil
- 3 green onions, thinly sliced including tops
- 1 cup diced ham
- 1/2 cup peas
- 1 (8 ounce) can pineapple chunks, drained
- 1 egg, beaten
- 1 tablespoon white sugar
- 1 teaspoon salt
- 1/2 teaspoon white pepper
- 1/2 teaspoon garlic powder
- 1/4 cup soy sauce

- 1 ounce cream of coconut

Triple-Layer Mud Pie

MIX chocolate and condensed milk; pour into crust
- 3 squares BAKER'S Semi-Sweet Chocolate, melted
- 1/4 cup canned sweetened condensed milk
- 1 OREO Pie Crust (6 oz.)
- 1/2 cup chopped PLANTERS Pecans, toasted
- 2 pkg. (3.9 oz. each) JELL-O Chocolate Instant Pudding
- 2 cups cold 2% milk
- 1 tub (8 oz.) COOL WHIP Whipped Topping, thawed, divided
Double-Meat White Ragu

Place the mushrooms in a small saucepan and cover with the stock (or water); bring to a boil
- 1 handful dried porchini mushrooms
- 1 1/4- 2 cups vegetable stock or water
- Salt and pepper
- 1 pound bucatini (hollow spaghetti) or pici (fat spaghetti, not hollow)
- 2 tablespoons EVOO
- 1 pound ground veal, patted dry
- 1/3 pound bulk sweet italian pork sausage
- 1 small carrot, finely chopped or grated
- 1 small rib celery with leafy top, finely chopped
- 1 small onion, finely chopped
- 3 - 4 cloves garlic, finely chopped
- 10 - 12 small sage leaves, thinly sliced
- 3 tablespoons tomato paste
- 1 cup dry white wine
- 3/4 cup milk
- Grated pecorino-romano, for serving
Chicken and Roasted Garlic Lasagna

For Chicken: Prepare the roasted garlic
- Chicken Mixture:
- 2 cups roasted chicken, shredded
- 2 bulbs of roasted garlic
- 1/4 sweet yellow onion, diced finely
- 5-6 baby bell peppers, diced finely (I used red & yellow)
- 6-7 fresh basil leaves, chopped
- Dried oregano, to taste
- Sea salt and freshly cracked pepper, to taste
- Other Ingredients:
- 1 (32 ounce) container ricotta cheese (I used part skim fat)
- 1 egg
- 5-6 fresh basil leaves, chopped
- Dried Oregano, to taste
- Fresh nutmeg, grated, to taste
- 1/2 cup + 3 tbsp of Parmesan cheese (divided)
- 9 whole wheat lasagna noodles, cooked per instructions
- Mozzarella cheese, shredded
- Roasted Garlic and Basil Marinara
