Pear Marmalade Recipe

In a food processor, cover and process pears in batches until pureed
- 4 to 5 medium ripe pears, peeled and quartered
- 1 can (8 ounces) unsweetened crushed pineapple, undrained
- 1/2 cup orange juice
- 2 tablespoons lemon juice
- 1 tablespoon grated orange peel
- 1 package (1-3/4 ounces) powdered fruit pectin
- 5-1/2 cups sugar

- SOUP:
- 5 cups low sodium, fat-free chicken broth
- 2 cups water
- 2 cloves garlic, chopped, divided
- 4 tablespoons fresh parsley, chopped, divided
- 1/2 onion, chopped, divided
- 3-4 tablespoons tomato sauce (I use my quick marinara sauce)
- Pinch crushed red pepper flakes (optional)
- Kosher salt and fresh pepper
- 6 ounces dry cut up spaghetti, I used Ronzoni Smart Taste
- MEATBALLS:
- 16 ounces 99% lean ground turkey
- 1 small egg
- 1/4 cup seasoned breadcrumbs
- 1/4 cup parmesan cheese, grated
- 1 tablespoon fresh chopped basil
Sticky Lemon Rolls with Lemon Cream Cheese Glaze

Prepare the lemons: Zest and juice the lemons
- For the dough:
- Lemons, for dough, filling, glaze, and garnish
- 3 large lemons, at room temperature
- 1 envelope (0.25 ounces, or 2 1/2 teaspoons) active yeast
- 3/4 cup milk, warmed to about 100°F (warm but not hot on your wrist)
- 1/2 cup (1 stick) unsalted butter, very soft, plus 3 tablespoons more for roll assembly
- 1/4 cup white sugar
- 2 teaspoons vanilla extract
- 4 1/2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon nutmeg
- 2 large eggs
- For the sticky lemon filling:
- 1 cup sugar
- 1/4 teaspoon freshly-ground nutmeg
- 1/2 teaspoon powdered ginger
- For the lemon cream cheese glaze:
- 4 ounces cream cheese, softened
- 1 cup powdered sugar
Green Beans with New Potatoes

Remove the ends from the beans
- 3 pounds fresh green beans
- 1/4 pound salt pork, sliced
- 1/4 cup bacon grease
- 2 cups chicken broth, plus more if needed
- 2 to 3 teaspoons House Seasoning, recipe follows
- 12 small red potatoes
- 1 onion, cut into slivers
- 1/2 stick unsalted butter, sliced
- Ground black pepper
Watermelon Sangria

Preheat the broiler to high and position the rack 8 inches from the heat
- 1 pound penne rigate (ridged penne)
- 1 1/2 pounds ground beef
- 1 tablespoon ground cumin (1 palmful)
- 1 tablespoon roasted ground coriander (1 palmful)
- 2 tablespoons chili powder (2 palmfuls)
- Coarse black pepper
- 1 large yellow onion, chopped
- 3-5 garlic cloves, chopped (we really like garlic so I put in more, the recipe calls for 3)
- 1 jalepeño
- 2 tablespoons butter
- 2 tablespoons all-purpose flour (2 palmfuls)
- 2 cups milk
- 3/4 pound cheddar cheese (about 2 1/2 cups)
- 1/4 cup fresh cilantro leaves (a generous handful), chopped
- 1/2 cup fresh flat-leaf parsley leaves (a few handfuls) chopped
- 1 14-ounce can diced fire-roasted tomatoes

- 1 1/2 cup cinnamon chips (1 pkg. Hershey’s)
