Ingredients

    chicken breast, grilled and sliced

  • 2

    cups arugula

  • 1

    T. olive oil

  • Juice of half of a lemon

  • Sea salt and pepper

  • 6-8

    cherub or cherry tomatoes, sliced in half

  • 1/8

    cup macadamia nuts

  • 2

    T. soft goat cheese, crumbled (optional)

Directions

Toss arugula with olive oil, lemon, sea salt and pepper. Plate and top with tomatoes, nuts, cheese, and chicken.
